You may know us from events that we have held all over Boston as well as further away in Chicago, New York City, and more. We've operated everywhere from cooperative Airbnb kitchens for an impromptu dinner party to outdoors with our favorite farmers for springtime "flower potluck" events to multiple invitations to cook at the prestigious James Beard House.
Finally we made the decision to take this hobby, and devote ourselves to it full time, and our first project involved setting up a temporary restaurant, “Bread & Salt at Wink & Nod,” which operated for seven months in Boston’s South End to local as well as national acclaim. There we honed our culinary programs and other systems, even developing internship programs both in the kitchen as well as in service and administrative roles. All of which positions us ahead of the curve as we head into our first permanent restaurant opening.
Juliet will be a place to continue to explore our interests, hobbies and personal proclivities with our own community; serving all day, in a fun and approachable manner. Both a meal, with options for quick service or to spend all day with us, as well as an experience, with our open kitchen and friendly but skilled service.
We'll make everything by hand as possible, supporting our network of local farmers, fishermen, and other producers we have come to know and trust. You can count on us for well sourced, direct from the farm meats, cheeses, eggs and dairy in addition to produce. You can expect us to display a high level of professionalism and training both in the kitchen and without while you enjoy a comfortable neighborhood experience whether seated at our table or simply picking up coffee to go.
On going development includes plans for leisurely weekend experiences including a full afternoon tea service and family style dining in the evenings. Carefully curated wine programs and retail options celebrating our own work as well as that of some of our favorite producers like the very fresh and very local sumac made for us by the Shuldiners in New Hampshire or the saffron that local company, Rumi Spice, imports for us direct from Afghanistan where the farmers grow the elusive spice where they once grew opium poppy.
The menu and the service at Juliet will showcase a collection of our favorite things, ready to be shared with you, but the sharing doesn't stop there. In addition to the retail offerings, essentially opening up our pantry to your home look for design elements all around that reflect our own work, our families’ or our friends’. From Katrina's line of 100% hand made "Post Oak Aprons" or her hand forged (josh helps) iron "S" and "J" hooks providing essential function around the restaurant to our one of a kind pottery. All complimenting the handmade nature of the kitchen and ensuring the experience at Juliet is always as unique and personal as it is delicious.
Bread & Salt Hospitality is a company that is about people as much as it is about food. To this end we are serious about our training and career programs. Our goal is to provide stable, safe and fair working environments. That means we invest a large amount of time in training and setting expectations for our staff. Bread & Salt boasts a loyal staff, some of whom have been with us since even before our current projects.
In producing Juliet, Bread & Salt Hospitality is ready to establish ourselves as at once a friendly, approachable and high performing restaurant and cafe as well as a training and proving ground for an upcoming generation of skilled and career oriented professionals in culinary and hospitality fields.
This fundraising effort will help us in necessary renovations and upgrades to our Union Square space. We have set a minimum goal that will get us where we need to be to operate Juliet. We do, however, hope to meet that goal early and with your help to surpass it. Additional operating capital helps us immensely and trickles down to supporting our hard working farmers and producers as well as to provide security and stability for our dedicated staff and to help us navigate any changes to the plan along the way, as is inevitable in a project like this.
We are pleased to invite you to be a part of this beginning with us. The ideas and vision behind Juliet have been well incubated and rigorously tested. Our staff is trained, enthusiastic, and committed. Our recipes tested, tasted, recorded and well practiced. Our vision clear.
Juliet is ready for it's permanent stage, Bread & Salt is ready, with your help, to build it.
Risks and challenges
Opening a restaurant is risky business. Especially in the beginning stages where capital is quickly burned up in construction, rent due before revenue and expensive licensing processes.
We have diligently decided on a concept in a space that we believe in. We have a well proven track record both in managing standout local restaurants and in working under dynamic conditions.
Our management team is small and we are hands on through the entire process working with well recommended professional we trust and who know how to get things done.
We are confident that our experience and our ability to adapt and get the job done will show us through these challenges successfully.Learn about accountability on Kickstarter
