A fine dining restaurant that won't break the bank.
An elegant yet simple menu chosen by me from 25+ years in the restaurant business.
Why is affordable fine dining so important? Well not everyone here in Corpus Christi can afford to go out to eat and spend $300 for a date. That doesn't mean that they should stay away from going out. This is an option with a simple menu but elegant enough to impress that special person and it doesn't mean there wont be chefs specials such as coffee rubbed filet mignon with pate de foie gras and white truffle sauce. I just don't see people wanting to spend the $90 per plate I would have to charge when I can make other chefs specials just as flavorful for about half the price... still elegant and still tasty.

What do I bring to the community? I bring the opportunity to all of the community to have a place to enjoy a special event such as first date, prom night, or anniversary on a budget. I also believe in supporting local companies. If i can find local vendors who have the product at the same quality and price then I will get my product from them. Texas micro-brews and Texas wines for example. I will also be giving back to the community through support of local charities.
I need $400,000 to do this. I currently have saved up $200,000 so I only need another $200,000. This would be great if it would all come from Kickstarter but I know if I can raise $100,000 here then I can get the rest from a bank.
What that $400,000 is for:
$280,000 for the build-out of the leased space.( I should be able to get a build-out allowance from the landlord of about $30,000)
$80,000 for all the equipment ( hood vent, walk-in refrigerator, stove and ovens.)
$40,000 for product and training labor while i get up and running.
$20,000 for backer rewards

Risks and challenges
The risk of this is not charging enough for the menu items and finding out that you are losing money.
Through careful examination of every weeks orders finding the best quality ingredients at the best price and monitoring how my labor and food costs increase or decrease will allow me to maintain profit and best price.
Training the staff to treat all guests as if they were a king or queen. The proper way to serve the food, how to give guests an unforgettable evening without hovering at the table and keeping the evening about them. This comes from training the staff correctly and not settling for second best if the staff can go that one step further.
Reasonable prices, great food, and superb service we can bring Corpus Christi a fine dining experience that everyone can afford.
