We're Aubry and Kale Walch, two siblings with a mission to open the world's first vegan butcher shop so we can expand our line of locally sourced, hand-crafted meat-free meats and continue to sell them directly to our customers year-round - both here in Minneapolis and around the country.
We've created complex and flavorful products that will satisfy any herbivore, omnivore, and even self‐proclaimed carnivores. In addition to our five mainstays shown below, we've created a series of successful weekly specials like Maple-Glazed Bacon, Hawaiian Ribs, Andouille Sausage, Scarborough Chicken, Beer Brats, Mexican Chorizo, Pulled Pork, and Maple Sage Breakfast Sausages.
That's right! We have carefully crafted 100% vegan, cruelty-free meat alternatives that capture the best flavors, textures, and nutrients that meats have to offer without their negative impacts on health, animals, and the environment.

The Herbivorous Butcher is a Minneapolis based company; therefore, we believe in keeping our ingredient sources close to home. Whenever possible, we source local, sustainable, organic ingredients from local farmers and milling companies.
Minneapolis Farmer's Market
In June of this year we started selling our meat-free meats at the Minneapolis Farmer's Market, the largest in the upper Midwest. When we first arrived we had no idea if anyone would be interested in our meats, and, to our surprise, we sold out of every product that day and every day since that we've gone to the market! In our short time there we've already made a great number of friends and we're planning to have out meat-free meats at the farmer's market even after our butcher shop opens.
Help Us Take The Next Step
We intend to open the first vegan butcher shop in the world! A shop would provide us with enough space to make more weekly specials, as well as vegan cheeses, deli meats, meat rubs, marinades, breads, and regular gluten-free products, We would also feature take-and-bake items, ready-to-eat daily specials, and let's not forget Thanksgiving turkeys and holiday hams. An open-floor plan and large deli cases would allow customers to see finished and in-process products before we wrap them up.
Another one of the great benefits of opening our own butcher shop is that we'll be able to ship our meat-free meats and other products all across the country! Our products will never be frozen and will always be made by hand in small batches here in Minneapolis at our shop.
The Vegan Butchers
Brother and sister duo Aubry and Kale Walch have spent the last several years perfecting The Herbivorous Butcher’s deliciously deceiving meat-free meats. Aubry has been a vegetarian for 18 years and has spent over a decade creating meat-free alternatives to many the foods that she grew up with on Guam, a place where cooking was a deep-rooted part of everyday life and each meal consisted of at least two different kinds of meat or seafood, not to mention a wide variety of flavors, spices, and textures, blending Guamanian cuisine with culinary cultures from across the world.
After years of watching Aubry thrive as a strict vegetarian, Kale Walch followed suit and became vegan. Over the past several years, he has developed a keen sense for the many ingredients and methods that go into making the most flavorful, nutritious and satisfying meat alternatives. Having made the change from omnivore to vegan more recently, he is able to invoke the flavors of his previous “meat palate” to create realistic and tastefully accurate meat-alternatives.

We understand that this won't be easy, which is why we're working with a team of professionals to help ensure that our meat-free meats will be just as fresh and delicious when they come from the butcher shop as they do now. Everyone from our architects, to advisors, right down to our photographer and graphic designer, everyone is committed to making this project a success.
