An integrative cookbook which combines gourmet raw & traditional foods, inspired by a decade of clinical work.

Intuitive Eating: Integrating Raw & Traditional Foods is a cookbook geared toward conscious omnivores, based on a decade of clinical experience working with clients and my mentor in nutrition and healing, naturopathic doctor and renegade nutritionist, Dr. Vincent Medici.

Since the cookbook is being self-published, your generous contributions and pre-buys of the cookbook, will support my mission to make this food wisdom available to many more people, especially those with less access to fresh, locally grown, organic or beyond organic foods.

The Purpose:

The cookbook aims to help people empower themselves, heal and thrive, by relying upon food as a primary pillar of the healing process. Serving as a valuable, accessible and simple resource for all types of individuals who may embrace divergent food philosophies, this cookbook embraces those new to the kitchen as well as those well-versed in food as healing “medicine.” Designed for people who do not adhere to a singular food tradition, the cookbook is intended for those who embrace an open, experimental, and adaptable approach in choosing which foods may be the most healing for them in the moment--whether that includes nutrient-dense proteins and traditional/ancestral foods a la the Weston Price Foundation, the high-raw primal foods of Aajonus Vonderplanitz or raw vegan, vegetarian, Ayurvedic or Macrobiotic foods. The cookbook honors individuals who apply what Dr. Medici used to call the “Bruce Lee” approach, meaning they “take what’s useful” from any tradition, and incorporate it consciously and creatively for their own well-being and life path.

The Story:

All of the recipes have been directly inspired by my years of working with Dr. Medici and the hundreds of clients whom I have personally taught in the kitchen. I have had the great fortune of witnessing firsthand, in real, live human beings, not theories and studies--what generally worked and didn't work clinically for people in the realm of food. For the last decade, as I compiled and concocted numerous recipes to suit the palate, health condition (or lack thereof) and diverse ethnicities of our clients, I realized it would make more sense to create a cookbook to share these powerful insights about food, rather than to continue teaching primarily on a one-to-one basis. The cookbook will enable me to share with others the primary wisdom about healing and food that I've gleaned over the last decade. It is my way of "paying it forward" for future generations. My hope is that this vital information will assist individuals who seek to augment or reclaim their own health. The time is urgent for Mother Earth and for our own health, and the more of us making wiser consumption choices with our foods--the better for all concerned.

Suitable for anyone newly on a healing or inspired journey with food as well as folks who already possess an abundance of food wisdom, the cookbook will be simple, straightforward and uncomplicated, to respect the fact that many people are not able to devote entire days in the kitchen, farm or garden. May we aspire in that direction, however right now, we are still a world in transition, learning to return to the hearth, home and farm. (To those of you already living a homesteader lifestyle, more power to you!) As we heal, regain our energy, and reconnect more deeply to the source of our foods, we naturally invest more time in the kitchen: preparing, cooking, gardening, harvesting or shopping for our own food. It is a natural, welcome byproduct of this way of eating. This cookbook is devoted to this transformation happening in each one of us.

For people who appreciate fewer ingredients in recipes, without compromising taste, this cookbook has you in mind. The recipes selected have been utilized with hundreds of clients who wanted gourmet-tasting foods that didn’t require an inordinate amount of chef skills. Fortunately, when we choose to eat close to the source, and select seasonal foods at their peak ripeness, an abundance of flavor naturally exists, even without a lot of added gourmet flourishes, ingredients or techniques. Food doesn’t have to be “complicated” in order to taste extraordinary, especially when using whole foods of top-notch organic or “beyond organic” quality and freshness. The recipes will provide a basic framework, upon which any gourmand, wild food forager or novice cook can build upon with endless creativity, if they so choose. The basics are a foundation, from which you can easily explore, experiment and deviate to your heart and taste’s desire.

The overall aesthetic of the cookbook will reflect the beauty of a simple, connected, conscious and inspired life. The recipes are practical, gourmet and minimalist enough to ignite passion vs. overwhelm in you, when you venture into the kitchen. My aspiration has always been to marry taste, time and effort for clients so that food preparation and cooking remains a perpetual joy rather than a burden.

About:

My name is Carry Kim. For the past decade, I've worked in the holistic healing arts as a Yoga & Shiatsu therapist, Ayurvedic and Therapeutic Nutrition Educator. I've mentored with Dr. Vincent Medici, since 2003, teaching hundreds of clients privately how to empower themselves with food in order to facilitate healing. We worked with a host of conditions and diseases along the grand spectrum of life and death and with each person our mission was ultimately, always the same: discovering how to uniquely nourish a person back to "life" and ignite their passion to live vibrantly. We enthusiastically enouraged people to thrive vs. merely survive. I taught clients from all walks of life how to prepare raw and traditional foods to help vitalize, augment and/or hopefully, restore them to health. Witnessing firsthand the power of food for healing, led to the vision for this cookbook.

Mia is a chef, forager, photographer, food stylist and writer in Los Angeles, California. Her culinary passions include studying food anthropology and applying traditional, as well as modern gastronomy to her culinary experiments. Tracy is an international cinematographer well-versed in documentary and music video genres. Risks and challenges Learn about accountability on Kickstarter

Well, anything worthwhile in life comes with accompanying "risk" factors. Thankfully, this project has been percolating for many years and is not something that arose fly-by-night; my Divine team is comprised of consummate professionals in their respective fields. The text and recipes for the book were completed many moons ago, and now only need fine-tuning and tweaking. Of course, as with all things creative, there will be inspired last-minute additions and changes, to deliver you all a better cookbook. Those on my team possess a dogged persistence by nature, that will ensure we create this cookbook with joy and dedication. Call me a bloody optimist, however, I foresee no obstacle that will stop this Divinely-inspired freight train from arriving ;0)

I have full confidence in myself and my team (who all happen to be friends) to accomplish our mutual task of delivering a beautiful, minimalist, cookbook which will benefit many lives. This project is truly a labor of love and my main purpose behind it is first and foremost to help others help themselves. With this goal in mind and heart, I believe nothing stands in our way. We are determined and will finish the project out of love for the Planet and the wisdom that health is our inheritance. We are here to live and demonstrate this fundamental Truth! Ya la suo!
