Overview:

For the Last year and a half we have been using borrowed space and equipment in Salt Lake City, and it is time for us to have our own. This will allow us to introduce and make available the Kouign Amann to a larger number of people across this Country and help a Hurricane Katrina relocated chef make a comeback to New Orleans. Because Kickstarter has such a wide reach and so many generous backers we believe that it is the perfect place to get the ball rolling on this project.

When we reach our goal of $8,407.00 we will open a website to have a platform to sell our pastries from. To do so we need equipment, & all of the supplies to do our first batch and ship them to you. The equipment includes an oven, proofing box, a work table, baking trays, & a cooling rack with wheels. The supplies include all of the raw ingredients to make the pastries, boxes for shipping, and the cost of sending them to you.

Our ultimate dream is to purchase the equipment to keep up with product demand, add more pastries to our product line, and open our own pastry shop in New Orleans, Louisiana.

Your support is the key to our success, without all of you out there there would be no us. Coming to that realization very early, we know that this is not just our project or patisserie it is all of yours also!!! Because of this, it is very important to us that we incorporate our group of supporters into our patisserie. How We Met these Uniquely Enchanting Pastries:

We first encountered and immediately fell in love with Kouign Amann while visiting friends in the beautiful city of Vannes, France. This 2000 year old picturesque maritime market city appeared in the last of the Three Musketeer Novels and seems not to have changed a great deal. Vannes is still filled with old stone buildings, surrounded by medieval castle like walls, and its harbors are dotted with ancient boats. Everywhere you turn there are bakeries that have been selling mostly rustic versions of this regional specialty for generations to locals and tourists alike. There is an annual competition of all the bakeries in the city to see who makes the best Kouign Amann.

Wandering the cobblestone streets of Vannes from bakery to bakery tasting all of the winning pastries of years past, our favorite was a modern version of the rustic original. It had a complex flavor and beautifully light flakey layers, yet still had the gooey interior and crispy salted caramel outside that the Kouign Amann is so well known for.

Later, Lya learned how to make Kouign Amann while training at Le Cordon Bleu in London, England. Over the year and a half that we have been making them, we constantly worked on the recipe and our laminating technique to make them as close as possible to the modern ones that we loved so much during our time in Vannes.

The name is a little hard to pronounce for some. I have heard them called “Koolieman”, “Kouie Man”, “Aqua Man”, “Queen Anne”, “KA”, and even “those things”.

Kouign...A...What?

Kouign Amann is a very specialized pastry and is notoriously difficult and exacting to make. The process of laminating, folding, and resting the dough, takes 3 days. (Obviously we had to condense the process to fit into a short video) KOUIGN AMANN (pronounced Koo-WEEN a-MON) means “butter cake” in the ancient Celtic language of Brittany. This region in the north-west of France is known all over Europe for its salted butter and is the birth place of Kouign Amann

You will likely only find other flavors of Kouign Amann in Brittany, France. We started with classic and chocolate ganache filling and now make an ever growing number of different flavors depending on what is in season and what inspires us. The current list of flavors includes apple, strawberry, peach, plum, almond, mascarpone cheese, pear, and hazelnut.

Can Pastries be Responsible?

As often as physically possible we use responsible and or organic ingredients in our pastries. Refusing to compromise or cut corners, we never use any artificial additives, flavors, or preservatives.All of the ingredients we use are 100% NATURAL & all of the pastries we make are 100% HANDMADE. Only using seasonal fruit at the height of their local availability and the always exceptional Central Milling organic flour we are able to provide pastries with the best possible flavor.

When it is not possible to use local ingredients, either because none are available or the use of an inferior ingredient would drastically change the end product, we source the best products available. We use “Fleur de Sel” (French sea salt harvested by hand), Valrhona chocolate from France, water imported from France, and Beurremont butter from Vermont produced in the French style (some of the best butter made in this country). Because of the exacting process and the ingredients that we use, we are able to create a product that is remarkably similar to the one found in Brittany.

Who Is “Petite Sophie” (Little Sophie)?

Lya & I just had our first child 9 months ago and her name is Sophie and like the name says she is very tiny. Of course we would like what we do to reflect our two biggest loves in our life, our sweet little girl Sophie and making pastries.

Since November 2011 we have been making & selling Kouign Amann six days a week, constantly working on perfecting the recipe and developing unique flavors that you cannot find anywhere else. During that time we have test shipped hundreds of them across the country, so that we can bring you the freshest product possible. Unlike other Kickstarter projects we have real world experience making and selling this product daily. So you are guaranteed to get what we promise in a timely manner.

I (Jeff) attended The Culinary Institute of America in Hyde Park, NY and Lya attended Le Cordon Bleu in London. We are two culinary professionals, with a combined 24 years in the industry, that has taken us all over the US and Europe to educate ourselves and receive the best possible training. With our serious dedication and love for our craft, you can guarantee that if we plan on doing something, we demand that it is done right. We refuse to take shortcuts and go to huge lengths to provide you with the most authentic handmade artisanal product possible.
