After a 15-year journey with Sweet n Savory that has been filled with countless life lessons, struggles, great devotion, successes, many embarrassing and many exciting moments, I am humbled, honored and joyous to be co-creating our SNS Leland project with the local community.
As our new logo depicts, Sweet n Savory is built upon a foundation of Community, Authenticity and Love. This bedrock foundation is the core of who we are and of why we do what we do and is the firm ground upon which SNS Leland will be brought to life. For many years, people asked me what type of restaurant we are which always led to an awkward and usually -long winded answer of what we do, but which never seemed to capture the essence of who we are or the true spirit of the brand. Nowadays, when I am asked the very same question, I simply answer that we are a restaurant built on the foundational values of Community, Authenticity and Love.
We define Community as being in harmony with each other, being genuinely connected with each other and being truly kind to one another. We understand that we all share the same universe and that by viewing each other as whole human beings instead of labels we place on ourselves and each other, our lives become infinitely more vibrant.
We define Authenticity as being real and being human and in living life from a perspective of humility, sincerity and grace. On a personal note, authenticity has been about a never-ending journey of learning to love myself, to forgive myself and to trust myself. As I have learned on this personal journey, it is only through loving, forgiving and trusting myself that I can authentically love, forgive and trust others.
We define Love as warmth and tranquility and of accepting all past, present and future without judgement. We live in a society in which fear and judgement tend to rule our lives and everything we do, and that we spend much of our time and energy fretting about the past and worrying about the future. We believe that love conquers fear.
If you are still reading at this point, I am grateful. In the paragraphs below I will describe the project itself, what we need to get it going, what we need from the community and what we are providing back to the community.
The SNS Leland location will be in the location in Waterford that formerly housed Eddie Romanelli’s and Fat Tony’s. When I spend time in the space, I can best describe the vibrancy as that of a puppy at the pound who can’t wait to be taken home and loved. While SNS Leland will be built on the same foundational principles as SNS Wrightsville Beach, it will be allowed to grow and develop its own unique identity and personality, as SNS is a community restaurant and Leland is not Wrightsville Beach and Wrightsville Beach is not Leland. The basic business model of dinner, lunch, breakfast, brunch, bar, fresh baked breads and desserts, moderate price points, prime steaks at way below market pricing, making everything from scratch, large and inexpensive wine selection, extensive, diverse and dynamic menus, wine education, catering, staffing requirements, pay scales, operating systems and financial management models will all be brought to Leland as these are the “what” of who we are. As far as specific menu items go, we will listen to the community and will create menus that blend some of the favorites from our Wrightsville Beach location with many new dishes that will become new favorites of our Leland home.
One of the beautiful things about our new home in Leland is that it has great bone structure in that all of the major parts such as hoods, walk ins, the bar, plumbing, the dining room and electrical are already there. Because all of these things are already in place, the start-up costs of our new home are very low by restaurant standards at $450,000 with a high-level breakdown of these costs shown in the section below.
Here is the place where I set aside my ego and my pride and I lay myself bare to the community and see what happens. It is here where I take the leap of faith that the community will respond and co-create SNS Leland with us. I am humbly asking you to allow love to conquer fear and to take the leap of in both myself and in Sweet n Savory and to give to this Kickstarter project.
With all of that said, what are we offering the community? If the trust is there, and if you are ready to take part in funding this project, what are the overall benefits to both the community and to yourself? On the most basic level, the community gets SNS Leland as a place to meet, gather, eat and feel a sense of community, authenticity and love. However, we are offering much more than this to the community as this next part is what I am personally most excited about. Specifically, I am committing that 50% of all future paid profits of SNS Leland, LLC will be spent on investing back into the Cape Fear region in ways that bring our entire community together and on healing divisions within our community. This investment back into the community will have no political agenda or leaning as a true sense of community is never about being politically right or left or center, it is just about being human. As these paid profits are invested back into the community, we commit to openly communicating the “why” and the “what” through direct communication and through the press. The final incentive to you for assisting us in funding this project is our detailed and generous rewards program which is self-explanatory. All levels of the rewards program are valid at either our new Leland or our Wrightsville Beach location and at any future Sweet n Savory locations that are opened while the rewards are still valid.

Risks and challenges
Challenges are merely obstacles to overcome. As CEO of Sweet n Savory, I can promise that we will always do our best. As a longstanding proven business model, we have a deep appreciation of what it takes to make the SNS brand tick and evolve and be financially successful. For this section I will share our best estimates of some our core numbers based upon our experience. We offer no guarantees to any of these numbers and we are providing them as simply the best information we have at the present moment.
The estimated cost breakdown to get this project underway are as follows:

All businesses are heavily dependent upon revenues in order to generate profits. Our best estimate for the required break even revenue for the Sweet n Savory business model for our new Leland location is between $1.5-$1.75 million annually. This figure represents approximately 50% of our current and historical sales volume at our Wrightsville Beach location. Once break even revenues are reached, net profits for our business model generally run between 15-25% of sales in excess of the break even revenue figure although nothing in this life is guaranteed.Learn about accountability on Kickstarter
