The Simmer Truck will be Milwaukee's premier soup location - and with four wheels and and engine, that location can be anywhere.
Simmer Truck will be Milwaukee's place to go for the best homemade soups, salads with made-from-scratch dressings, and unique and delicious paninis. The truck will be a fixture at lunch hotspots in downtown Milwaukee, area college campuses, the best festivals, and for catering clients across the metropolitan area.
The Simmer Truck is the realization of our passion for culinary technique and originality in general, and great soup in particular. As a husband-and-wife team, we have devoted ourselves to making the Simmer Truck not only a great mobile restaurant, but a solid and successful business as well.
We're extremely pleased to have the support of Landmark Credit Union, who has believed in us enough to finance the cost of our truck (OK, so it's a bus, but why quibble?), the on-board kitchen and the renovation; and of some very supportive relatives who have helped us raise the startup capital we need to buy equipment, initial inventory, and the funds for necessities like permitting, licensing and the design of our awesome logo.
But no bank loans 100% of anything, and this is no exception. Landmark has given us 80% of the cost of the truck; we're asking you to help cover the rest.

Our greatest challenge will be to identify the best spots to set up and sell in order to maximize revenue. While there will certainly be some trial and error involved, we have taken steps to mitigate that. We have partnered with other food trucks in Milwaukee who have already helped us find spots both with them and on our own, as well as introducing us to festival organizers who are interested in having Simmer Truck at their events.
Another challenge faced both by food trucks and ordinary restaurants is underestimating the time and complexity involved with operating a food service operation. Steve has more than a decade of experience opening and running restaurants and cafes, so he has a clear understanding of exactly what is involved in opening the Simmer Truck.
