Magna was born out of an idea when my culinary journey started 17 years ago. As a young cook then, Filipino food was always part of my life. From cooking at home with my family to introducing classic dishes to the people I worked for, I always made sure Filipino food was always in the conversation.
It wasn't until my father passed away in 2009 that my need to fulfill this dream ignited. It started small....incorporating Filipino flavors and twists on traditional Filipino dishes onto menus at places I cooked at; to the very first Twisted Filipino Dinner in 2013 dedicated to my dad. That was a huge step for me to see all the support pour out for my two day dinner, from the friends that helped me in the kitchen, to the friends and family that came and ate.
Throughout the years I have made it a point to keep pushing Filipino food to the front of the line. As a chef, I've been invited to many large events, TV appearances, demonstrations, etc...each one I have made it a point to create a Filipino inspired dish to keep the food on peoples minds.
Fast forward to today, where Twisted Filipino Dinner pop-ups are popular and gaining more traction everyday, Filipino food is all over the culinary scene, and the dream of opening Magna is becoming a reality.
Through personal investment, this project is coming to life, but there is still a need for a real push in support. Kickstarter is a great opportunity for me to be able finish strong. Opening a restaurant is no easy task, and this is no different, but with the support and love of the community, the burden on any one individual can be eased and also uplift the spirit into realizing that someone has your back.
Risks and challenges
9 out of 10 restaurants fail. That is a fact. A reality that I am familiar with. I have seen places open and close in a blink of an eye and also have been part of that statistic. 17 years in the culinary industry and no one has a set formula. There is always a risk that things will not go your way.
One thing I do know is that proper preparation prevents piss poor performance. After years of working, testing, failing, and succeeding, I can now say with confidence that I have prepared myself in the best way that I can to venture forth and begin this journey. I still have a lot to learn, but I have a great set of fundamental knowledge to help me make the right choices.
Building a restaurant from scratch has many outside variables that can affect the timeline of any project. It is the controllable variables that will be handled properly and efficiently. This is truly a labor of love and many of the details will be handled and created personally, from the decor to the furniture, we will make sure that all details will be covered, checked, and triple checked.
With a tentative spring 2018 opening, this gives us ample enough time to layout each detail and ensuring us enough time to adapt to any variable that comes our way.
