About this project
Sanitas Brewing Company is a new artisan brewery in Boulder, Colorado. Founded by award-winning brewers Michael Memsic, Chris Coyne (formerly of Boulder Beer Co.) and Zach Nichols (formerly of Redstone Meadery), Sanitas Brewing Co. will focus on a collection of specialty experimental beers as well as flagship canned offerings. The central Boulder brewery also features a large contemporary Tap Room and biergarten for locals to enjoy the craft beers and socialize with other beer enthusiasts.
Sanitas Black IPA and Sanitas Saison lean on old-world brewing tradition as well as novel practices and ingredients. Both beers are brewed with organic ingredients and packaged in 12 oz. cans for their packability and ideal storage capabilities. Sanitas Black IPA is a dark ale loaded with resinous American hops. It has a clean maltiness and lingering piney/citrus hop flavor. Sanitas Saison is an classic farmhouse-style ale brewed with wheat and a blend of French and American hops. The resulting beer is crisp, fruity, and slightly tart. Both beers will be locally available in cans and on draft year round.
Furthermore, Sanitas will offer a series of premium beers referred to as the "Navigational Collection." These beers will focus on innovative styles with a twist of exploration. Many will feature unique hops, malt, yeast, ingredients, and brewing practices. The Navigational beers will be sold locally on draft and many will make their way into 750 ml bottles. Future releases include a Double India Pale Ale and an Imperial Stout.
Finally, we plan to offer a rotating series of extremely unique and rare beers called the "Parliament Collection." These are beers that rely on wild yeast, bacteria, exclusive ingredients, fresh oak barrels, and used spirit and wine barrels to capture highly interesting flavors. This is our brewers' playground, if you will. These beers will make their way into corked and caged, 750ml champagne-style bottles and sold sparsely. This is where we need your help.
We will feature Colorado's first coolship. A coolship is a wide pan or tub used to naturally cool wort (pre-fermented beer) and expose the sugary fluid to wild yeast and bacteria. After this, the beer is moved to oak barrels for fermentation. The final beer features rich complexities and often a tart flavors that can't be achieved any other way. The cool thing is, because the natural yeast and bacteria that inoculate the wort are native to the area, the same beer could never be made anywhere else in the world! These beers will be a true representation of Boulder.
As it turns out, a coolship and wide collection of barrels isn't cheap. Unfortunately, we have directed the majority of startup funds to brewing equipment and building our public Tap Room. That's why we are reaching out to the Kickstarter community to help us acquire a coolship and barrels to create the unique Parliament beers. Oh yeah, and we're offering a bunch of cool and exclusive rewards in return.

How it Works
Now that you've checked out those amazing rewards, you probably want to know how to get your paws on 'em.
-Create a Kickstarter account
-Log into your account using your email and password (or Amazon account information)
-Donate in exchange for your favorite rewards.
-Spread the word. Share our project on the ol' Facebook, Twitter, Myspace (?), etc.
If we receive the necessary funds to achieve our goal ($20k) by the cutoff date, we will be awarded the funds to purchase our coolship, barrels, and necessary parts and you will be charged for donation and presented with your awesome reward. If we don't hit our mark by the deadline, you won't be charged, and we don't receive any funds :(
If we surpass our fundraising goal before the time is up, we will unlock some pretty amazing additional rewards.
If we can surpass our goal by $2,500 before the deadline, we will unlock this exclusive Sanitas grower koozie as a new $25 reward.
If we surpass our goal by $5,000 before the deadline, we will unlock 5 gallon homebrew recipe kits of Sanitas Saison and Sanitas Black IPA as a new $70 reward.
What will we do with the Money?
The money raised through this Kickstarter campaign will go towards purchasing:
-Used spirit and wine barrels as well as fresh oak barrels for aging beer
-Proper barrel filling equipment
-Barrel racks for storing barrels
-A large coolship for making wild beers
-Dedicated hoses, clamps, and gaskets used with the coolship
Stretch goal: $30,000
If we are able to raise $30,000 or more through your kind donations, we will purchase a small pilot brewing system. This will allow us to experiment even further with new ingredients and processes on a more micro level. These unique beers will be very limited and available in the brewery Tap Room.
Risks and challenges
Many of these rewards depend on product and staff availability. If there is an issue with any of the apparel or item printing, used barrel availability, or even the ability of one of our brewers to commit time to an event reward, there will be a slight delay in delivering your reward. We don't anticipate this being an issue and we'll work our tails off to get your reward to you as fast as possible.
The last risk to note is the fact that we are a startup. Like most startups, cash is tight (thus the reason we are running a kickstarter). We have many hurdles to cross in our future and there is always the unlikely possibility that we will not have the finances to deliver the rewards.
