For the love of beer…
This love drives our passion to offer uncompromising quality in our products, producing world class beer using only the finest ingredients and an unwavering commitment to excellence. We are committed to our belief in quality first, cutting no corners to ensure that every glass is savored and enjoyed, leaving you longing for the next opportunity. In the beginning… Over the last 20 years a spark ignited a passion for home brewing. It was a sample of a home brew produced by a family member in a commercially obtained “beer kit”. Immediately the wheels began to spin and this passion quickly grew from a commercially obtained “beer kit” using extracts to a mini-brewery using all grain, water filtration and automation. No one knew this sampling and what was thought of as a hobby would turn into so much more. It was a way to try new things, methods and beer styles and share with friends and family. It was so well received that people would line up to fill their growlers and jump at any opportunity to come to what was affectionately referred to as “The Red Dragon Brewery’.
The Red Dragon Brewery gets its name from the red dragon which appears on the national flag of Wales, which has symbolized this Celtic nation for more than a millennium. The brewery is inspired by the owners' ancestral roots in Ireland, Scotland, England, and in particular, Wales. So, it is with pride in this heritage that the Red Dragon Brewery is committed to producing the very finest of craft beers.
The Red Dragon Brewery team, with your support, has decided to take it to the next level and share the Red Dragon Brewery with you. The brewery will sell beer directly to the public in an onsite taproom. The taproom will be a warm, welcoming place where customers can enjoy beer in a relaxing atmosphere. Beer will also be available in bottles and growlers “to-go”, along with other promotional items such as Red Dragon logo t-shirts and glassware. Tours of the brewery and beer samplings will also be offered.
The Red Dragon Brewery will initially offer you three different styles of beer for its flagship releases:
- St. David’s Stout
- Road Rash Red IPA
- Counting Fireflies Belgium Blonde
In addition, Red Dragon Brewery will produce many traditional styles as well as a variety of experimental beers, creating a different twist on traditional beer. At any given time, the brewery plans to have five to six different beers available on tap for your enjoyment in house or to go.
Your support will breathe life into the Red Dragon Brewery in the following areas:
- Brewing System
- Fermentation Tanks
- Tap Room Enhancements
- Outdoor Enjoyment Area
- Miscellaneous Construction Costs
- Most importantly, the realization of this dream
The People behind The Red Dragon Brewery
Tom Evans: The Red Dragon Brewery initially started as a home brewery 8 years ago when Tom Evans sampled homebrew that his brother had made with a Mr. Beer kit. Tom’s reply was “You can do that at home?” Upon this discovery, Tom immediately went out and purchased a five gallon homebrew kit and started brewing his own beer. Very quickly Tom realized he wanted more control over the quality of each and every beer and thus decided to jump in to the all grain brewing process. But Tom doesn’t do things half way so he built a 20 gallon electric system with a lot of pretty stainless steel and implemented fermentation controls. He set up an in-home lab to monitor yeast health, culturing, and storage - all to increase the quality of the beer.
Mike Walsh: During this same period only five miles away, Mike Walsh was starting his adventure in brewing. His first kit was a Christmas gift from his wife and has since been dubbed "the gift that keeps on costing". Shortly after catching the brewing bug, he too jumped to the all grain brew method to take more control over the flavor and quality of his beers. Like Tom, Mike was focused on producing top quality beer and implementing processes, procedures, and techniques to make the finished product the best possible.
Dan Baker: Like Tom and Mike, Dan loves beer. More importantly, Dan loves quality craft beer. Dan began brewing beer with his grandfather over 20 years ago. Since then he has amassed over 20 years’ experience developing business strategies and numerous unique business management innovations.
Combined as a group, they have won numerous brewing awards including an international competition. Tom has personally qualified for a distinguished competition, the Masters Championship of Amateur Brewing. All three are deeply passionate about beer.

Risks and challenges
The Red Dragon Brewery has spent the last three years researching the brewery business, speaking to other brewers in the region, traveling to breweries of various sizes all across the globe and continued to hone their brewing skills on a consistent basis in both frequency and quality. They have worked with local consultants to create a solid business plan based on this research that leaves no stone unturned, from startup costs to ongoing business and regulatory costs/concerns. We feel that the Red Dragon Brewery is not jumping into this venture blindly, rather the team is fully prepared and excited about this adventure.
