About

Philosophy

Witchdoctor Brewing Company is the culmination of our passion for craft beer, creativity and pride in the quality of our craft. It is also a nod to the rich history of beer. It has been used for thousands of years for everything from a way to purify water so it didn’t make people sick to being infused with different herbs and spices thought to promote healing. Our slogan, “We Cure What Ales You” is a testament to the hard work we put into our beer to prepare, or cure, it and bring it fresh to your taste buds. Although we can’t claim that our beer will heal anybody, we do want to show just how delicious and satisfying this ancient beverage can be. 

Our Mission 

The beer we produce will be immediately available in our Taproom, where we aim to provide a relaxing and laid back beer drinking experience. This will include pints to enjoy on-site, growlers to go, local food offerings, local art on the walls and local music on special nights. We will also distribute our beer to local restaurants and eventually stores. We will use our creativity to create a rotating line of brews that our patrons will love in a variety of styles both well-known and unique with surprising ingredients. We feel that living your passion, whatever that may be, is very important to happiness in this life. We would like to do our part to make this a possibility for others. For every dollar donated to help launch Witchdoctor Brewing Company, we will donate a dollar to help other small business endeavors in the future. This is our way of thanking everyone for the support leading to Witchdoctor’s success and being the change we want to see in the world. 

Our Team 

I, Josh Norris, bring a talent for designing delicious beer recipes as well as mechanical components. I also bring management, marketing and promotional experience. In addition, I am one of the founding members of Fermenters of Central Connecticut, a homebrew club run out of Brew & Wine Hobby in East Hartford. My team and I bring a wide variety of skills to make this brewery put its mark on the craft breweries of Connecticut. 

Allison Norris, my wife, brings design skills that will be used to make the taproom feel welcoming, along with helping design labels, and other merchandise. Her skills at planning and organization will also be put to good use. 

Daryl Adamaitis, our brew master, worked at City Steam Brewery for four years as a brewer, and prior to that was an avid home brewer. He’ll bring his knowledge of production brewing and unique style to every beer we custom brew. 

The Brewery 

The Witchdoctor Brewing Company will be located in South Windsor, CT. The town is dedicated to encouraging small business growth and new excitement for its populous. Part of the Witchdoctor culture will be to do our best to be as “green” as we can. One of our goals is to adopt as much used equipment as we can. This will help us cut costs and help other businesses expand. We will use our ingenuity to make our processes as efficient as possible, such as using steam for most of our heating needs. We also intend to develop relationships with farmers to make use of our spent grains as feed for their livestock. Our goal is to start with a 15 barrel brewhouse. Wherever possible, we will employ local skills and labor to build our dream. 

Your Donations 

The most challenging part of opening a brewery is generating the upfront capital required to purchase equipment and make building modifications necessary to facilitate such a business. We are asking for $30,000 to help fund a brewhouse, fermenters, other important pieces and building modifications that will allow us to use all of this great equipment. We are going to use every bit of ingenuity and creativity that we have to stretch these dollars to their maximum potential. Even though we are asking for a substantial sum, it is still only enough to get us started. The more capitol we are able to raise, the more we can invest into making this business the best it can possibly be. Raising over our goal would allow us to invest in additional fermentation tanks, dispense equipment, aesthetics of the taproom, kegs for local distribution...The list goes on. So even if we've met our goal, know that further donations will help get this project off to a stronger start.

Risks and challenges

Should we get successfully funded, we still face possibilities of further challenges:

Consumer acceptance and brand recognition – We will be participating in a number of beer fests in order to get our beer out to as many people as possible. We will have our logo on display via a large banner at each event so that people will start to remember us visually as well as by our delicious beer. We will also be promoting ourselves via the internet and, for very special events, the radio. Once we have a location, we will also incorporate an easily visible sign in front of our building.

Training and skills – While we do have many of the skills required for this kind of venture, we still need a bit of guidance. We have developed important relationships with several people who are able to help guide us as we travel the path to running our own business, including owners of a brewery in the local area that has been very successful. Since Daryl has experience running a commercial brewing system, he will provide training to the rest of the team for the new equipment.
