Uncle Andy’s Jerky was born, five and a half years ago, formed by a passion for food and the possibility of exploring cuisines from around the world adding our favorite flavors to jerky.
Food evokes emotion and memories whether it’s your first time trying Thai food at a little Yellow gas station in Texas, your grandmother's famous Chicken Cacciatore or the Espetinho you got while at Carnival in Rio. Meat is the canvas for chefs around the world to explore thousands of flavor possibilities. After my first batch of jerky I was inspired and excited to challenge the limits of where innovative, flavorful jerky can take us.
We are committed to exploring all possibilities by working with fish, turkey, wild game while experimenting with recipes, regional spices and flavors from all corners of the globe.
In the years since we have launched I have had a retail store, sold at festivals, attended trade shows and explored selling to grocery stores. With jerky being a USDA regulated product, up until now we have relied on co-packers to help produce our product. Unfortunately, being a little guy, we have not had the flexibility to experiment with new flavors as rapidly & often we would like to. With all the limitations brought to small upstart businesses, I feel we haven’t had the opportunity to fulfill the original vision of continuous innovation. Uncle Andy’s Jerky isn’t interested in being the biggest jerky producer, just the most flavorful. We are excited about bringing new unique flavors based on you feedback to market. Being, huge craft beer fans, we are adopting the craft beer model of rapid innovation by offering rotating, limited run flavors in addition to our core products. We aspire to explore an array of flavors, from your favorite Cajun Catfish to Chimi Churri.
Cooking with Beer
With the craft beer being a huge influence on modeling Uncle Andys Jerky as well as being inspired by the Fort Collins beer scene, we are taking some of our favorite beers and developing new products that utilize their uniqueness. Throughout the process of developing new flavors we have explored methods of reducing the beer to intensify flavor. Discovering that stove top heat alters the beer too much, we are experimenting with a new process of vacuum evaporation. This allows boiling at lower temperatures as a means to preserve the essence of the beers. In turn this allows us to intensify the flavor and develop jerky seasonings.

Similar to the craft beer industry, we are offering experimental flavors exploring cuisines from around the globe, as well as a variety of meats. Based in Colorado, we are regularly asked about game jerky such as elk, venison, etc. While many of these meats may not be sustainable for large-scale production, our pilot program will allow us to experiment with some of these in small batches. Based on customer feedback there is always the potential to bring back flavors on a seasonal basis or even add to our core flavors in the future.

Alternating between the Pilot and Beer series, we will be offering a new flavor each month. 6 flavors in both series will be introduced in the first year for a limited time period of 2 months each.
A 2oz bag is the standard size we will be using for all the new flavors in pork, beef, turkey or buffalo. Wanting to really explore some unique game meats such as elk, yak, venison, etc, we may be packaging those in a smaller 1.5-1.75oz as the cost of the meat can be significantly more expensive. Over the 12 months we plan to only try one or 2 of exotic game. .
Many companies rely on focus groups to determine the flavors they develop and deliver to customers. Since customer taste is the most important to us, we are changing how we develop flavors by going straight to you, the consumer. With continuous product development, we will be offering samples of our test batches through social media for YOUR feedback.
We want complete control over production. Since Day 1, I felt I needed the ability to control our production from start to finish, fulfilling the vision for Uncle Andy’s Jerky. Recently, we found an opportunity to share space with a small USDA processing facility which will allow us to produce Uncle Andy’s Jerky ourselves. In order for us to get started with production, we need help raising capital for processing equipment as well as R&D of new flavors.
Where the money will be used
The money contributed to our campaign will be used to help us fulfill the original creative vision for Uncle Andy’s Jerky, allowing us to explore innovation with each limited run flavor. The money will be used to purchase bags, spices and create product to kick off runs, as well as develop new flavors quicker. Since we are unconventional in our process, it will also be used to make necessary upgrades to equipment (Ex. Vacuum evaporator, slicer, label applicator) to allow us to scale up from test kitchen to production.

Uncle Andy’s Jerky wants to make your flavor dreams come true! As part of the crowdfunding campaign, we will be crowdsourcing flavors. By contributing to the campaign, you have the opportunity to suggest a flavor you would like to see us make, as well as a brewery you would like us team up with. With the help of our foodie and beer friends here in Fort Collins, these suggestions will be narrowed down to 5 finalists in each category, to then be voted on. Through social media, facebook, instagram and our newsletter, YOU will vote to pick which flavor and breweries will be used. We will work with the winners to research and develop the flavor chosen from our campaign.

Risks and challenges
In the 5+ years developing and producing Uncle Andy's Jerky I have seen many challenges that come with producing USDA inspected Jerky.
Initially relying on co-packers to produce our product we were subject to large minimum volumes and growing lead time making it difficult to explore small batch flavors.
Now having partnered with smaller USDA facility which I am helping with their jerky production, we now have control of all aspects of our product from raw to finished product. Bringing production and development in house, allows us the flexibility to create these small batch flavor as needed. Working with USDA we have already received label approval on our core flavors, have designs and packaging ready to go so we can launch production without delay.
With 8+ flavors in development we will be able to launch ASAP releasing a new flavor every month as planned while we continue to develop more great flavors.
Controlling all aspects of production, the duty will be on us to deliver great product in a timely manor.
With an every changing market price and supply of various meats, our new more agile model will allow us to shift proteins if something becomes to scarce or cost prohibitive.
