About this project

Thanks for checking out our Kickstarter. Shalom Japan is going to be a wonderful restaurant, and we’d love for you to get involved. Our restaurant is going to have quite a unique, quirky, and sophisticated menu drawing from both chefs' backgrounds. The menu will be ever changing, utilizing well-sourced products, and showcasing the combined technical agility and outside the box thinking of both chefs.

ABOUT THE RESTAURANT

Chefs/Owners Aaron Israel and Sawako Okochi intend to share their unique culinary perspective with New York and the world. The restaurant will highlight their cultures, diverse cooking backgrounds, and passion for food in a casual yet refined atmosphere. The menu will be New American highlighting both Jewish and Japanese food as well as the commonalities between the two in a fresh and interesting way.

ABOUT THE TEAM

Aaron Israel was raised Jewish in Great Neck, New York. He has worked in numerous fine dining restaurants in New York City including August, under Chef Tony Liu, and spent three years working with Chef Andrew Carmellini at A Voce. He was the opening Sous Chef for Rich Torrisi and Mario Carbone, helping them develop and open Torrisi Italian Specialties.  As the Chef of Mile End, he launched their acclaimed dinner program and followed that up by spending time consulting in London. His food has been recognized by the James Beard foundation and influential publications such as the New York Times, Time Out New York, The Jewish Daily Forward, and The New York Observer.

Sawako Okochi has a vibrant culinary background rooted in her Japanese upbringing in Hiroshima. She moved from Japan to Texas in 1995. In 2000 she relocated to New York City to undertake the culinary program at the New York Restaurant School. Upon completing her internship at Chef David Waltuck’s, Chanterelle, she attained a job with Chef Anita Lo at Annisa. She worked under Chef Lo for five years and rose to the title of sous-chef. She spent five years as the Chef at The Good Fork and went on to be the Executive Chef at Lani Kai. Throughout her career she has done numerous, well-received and publicized supper clubs, most notably Otakara Supper Club. She was named by Mother Nature Network in their 40 under 40 rising star chefs.

Micaela Grossman, manning the space outside the kitchen, has managed acclaimed New York restaurants including The Odeon, Torrisi Italian Specialties, Seersucker and Smith Canteen, as well as Pigalle and Marco in Boston. She has curated savvy and unique wine lists and created innovative and well-received cocktail programs. She has appeared as a panelist on the television show Vine Talks, orchestrated and cooked dinners in the James Beard House, and hosted parties for the Tribeca Film Festival among other high profile events. Working alongside James Beard nominated Chefs Marc Orfaly, Mario Carbone and Rich Torrisi, as well as celebrated Chef Robert Newton, she has always created and elevated hospitality standards to match the caliber of the food.

私たちのレストランはニューヨーク州ブルックリンのサウスウィリアムズバーグというところにあります。この近所はまさにニューヨークのメルティングポット、様々な文化、人が入り交じり、ビデオに登場したぶたちゃんも近くに住んでます。シェフエレンとさわのタグチームで、二人のユニークなアイデアと斬新な素材の使い方、長年培った確かな腕を駆使して、まさにニューヨークならではの料理をニューヨーカーだけでなく世界の人々に食べてもらいたいと思っています。

シェフのエレン=イズラエルはニューヨーク出身のユダヤ人です。様々なシェフの下で修行を積んでいます。有名シェフ、アンドリュー=カメリーニの下で3年間イタリア料理を勉強し、さらにその後、大人気の店トリシではオープニングスーシェフ、そしてブルックリンのマイルエンドのヘッドシェフになりました。そこでニューヨークスタイルユダヤ料理のディナープログラムを始めて様々なメディアに取り上げられました。さらにはジェームズビアードファンデーションに認められ、ポップアップディナーのシェフに選ばれました。

そしてもう一人のシェフは大河内佐和子です。テキサスに大学留学後、ニューヨークに拠点を移して料理学校に通いました。有名なシャンテレルでインターン後、名店アニッサでは5年間じっくりアニタ=ローのもとでスーシェフ、その後ブルックリンのグッドフォークではヘッドシェフを5年間勤めました。自分の料理を追求すべくアンダーグラウンドレストラン、お宝サッパークラブを主宰後、マンハッタンに戻りラニカイのシェフをつとめました。

ジェネラルマネージャーはマケイラ=グロスマンです。彼女も様々な素晴らしい店で働いて来たベテランです。彼女のワインリストは定評があります。オデオン、トリシ、シアーサッカーなど、ニューヨークとボストンで腕を磨いてきました。彼女のワインリストとユニークなカクテルメニューは定評があります。いつもサービスが料理に沿うように、レベルアップするように努力してきました。

シャロームジャパンの料理のスタイルはニューアメリカンキュイジーヌです。日本食とユダヤ料理を取り入れた創作料理です。エレンが育ってきたユダヤ食文化と佐和子が親しんできた日本の食文化には共通するものが多々あり、遊び心を入れつつも、味は素晴らしいニューヨークならではの二人が作る料理を食べに来てください。

ニューヨークのマーケットで手に入る季節の物に合わせてメニューを変えていきます。新しい素材を使ったり、農家さんや業者さんと仲良くなったり、常に美味しいものを目指しています。

この角の店舗を私たちの夢、シャロームジャパンにする為に、内装工事をずっと頑張っています。ペンキ塗り、大掃除など、1年以上構想を練ってきたレストランが今まさに実現しようとしています。

Risks and challenges

No one ever said opening a restaurant would be easy, but we are more than up for the challenge, and in fact truly enjoy it. With decades of combined restaurant experience on the team and our real passion for what we do, we will tackle any and all obstacles in our path. Possible obstacles we could encounter would be building an initial audience, figuring out service issues in a new space, or figuring out what dishes are the most popular, but rest assured we're ready and flexible to roll with the punches.
