First, The West Coast's First 100% Paleo Friendly Food Cart.
Now COMING SOON, Portland's First 100% Paleo Friendly Restaurant!!!
We take a scientific approach to eating paleo, rather than a history-based approach. We want to eat optimally, using all the best modern resources available, so we can be totally badass 120 year olds. That means we're eating plenty of grass fed and pastured meats, lots of healthy fats, and more veggies than many vegetarians.
The paleo diet is sometimes described by what it isn't: no gluten, no dairy, no added sugar, no soy, and no legumes. We will serve healthful, nourishing entrees, sides and salads that are 100% gluten, soy, and dairy free.
Who We Are:
Heather: accounting genius, 14 years food & beverage experience, business school dropout, and the most hyper adult you'll meet all day.
Joe: paleo/primal diet follower, fitness freak, nerd about town, lover of meat.
We'll be located right in the heart of our own neighborhood, Kenton, in North Portland. We're one block from the Max stop and less than a mile to I-5.
The restaurant will be counter service casual dining. Bring your date! Bring your mom! Bring your babies! We'll be creating a kid's play/reading area to make sure everyone feels welcome. Because you are.
Our customers mean the world to us. Just to clarify. We plan on keeping ALL 3 CARTS OPEN!
Local grass-fed beef, wild-caught fish, pastured poultry, and a wide variety of organic and seasonal veggies.
We plan on serving up Zoodles and Grass Fed Meatballs, Lamb Curry over Cauliflower Rice, Seasonal Salads, Grain Free Chicken and Waffles, Bulletproof Coffee, Kombucha, and more!!! Maybe.... maybe even bringing the fries back... this time as Curly Fries!!!
Why We Need You:
We've used most of our savings from the cart to secure the restaurant space, and we've secured some of the equipment we'll need to get started.
We still need quite a few of the bigger ticket items to make this place super amazing!
Walk in cooler - $7000
Freezer (2) - $3500
Flat top - $1200
Prep Fridge - $3000
Smallwares (plates/cups/etc) - $3500
Signage and Build out - $9000
1st Month Inventory - $7500
1st Month Operating Costs - $15000
Yeah... that's $49,700. Unless we go WAY over, we're totally taking on that responsibility ourselves. Like a boss.
Portland. You. Are. Amazing. We've seen how wonderful and supportive the paleo community is here. Remember that time we raised money to launch in 4 days... or maxed out a vacant store for a Primal Palate, Balanced Bites, Nom Nom Paleo book signing?!? We can do this. And we can only do this together. Tell your friends. Tell your friends' friends.
Thank you so much for helping to make our dream jobs a bit closer to reality!!!

Risks and challenges
There are always unexpected costs and challenges.
Opening 3 food carts has prepared us only so much as that we are aware that we are never quite as prepared as we think we are.
Our only super power is that we work really really really hard.
