Where We Are Now
At Piemonte Farm we specialized in cow’s milk cheeses made with raw milk, aged to perfection in our cheese cave located at the farm and when pasteurized milk is available we make mozzarella, ricotta and fromage blanc).

Nowadays, Fabian, farmer-cheesemaker makes cheeses once or twice a week thanks to the generosity of friends and fellow dairy farmers and cheesemakers, the Gerringers.
You can read about the cows and the milk they provide ( http://www.piemontefarm.com/cows-milk-cheese/) The herd, a mix of Jersey and Holstein cows graze the pasture year around. They eat fresh grass, hay and forage that grow at the farm as nature intended with no use of artificial fertilizers or any other harmful chemical. We believe that animal welfare is a priority in order for the animals to express their own selves and provide fresh nutritious milk.
We are a family farm where everything from the time the milk hits the cheese vat at 4:30 am to the time a wedge is wrapped, is made by hand. Hand stirring of the curds, hand turning of every wheel in the cave and hand cutting and wrapping of every wedge. Every member of the family in a very diverse and unique way is involved in our cheese and farm journey.
Our cheeses can be found in local stores and restaurants in our Piedmont area, in farmers markets we attend on a weekly basis as well as cheese festivals and farm shows state wide.

Did you know that our Mobile Creamery project was awarded with the Leonard-Mobley Small Farm Grant Fund? We are thrilled!
The truth is the demand of our cheeses is growing steadily, we can’t grow faster as the availability of the creamery for Fabian to make the cheeses is just one or two days a week.
Did you know that we make only 8 wheels of cheeses at a time and that a hard cheese when using raw milk needs to be aged for at least two months? One batch of cheese ready to go out to the world of cheese lovers takes time, more than 8 weeks and we sell that batch out in about a week!
So in order to have more cheese available to satisfy the demand we need to increase our cheese making days. Our cheese cave at the farm have the capacity to age all of we can make in 7 days of cheese making, we need the creamery, and it has to be mobile. We’ll be able to jump from 16 cheeses a week to 56! Imagine the possibilities!
How can we do it? With your help!
So far we have been growing very slowly, using existing resources, and investing little by little back into our farm business, buying cheese molds, building materials for the cheese cave, and small equipment. But in the dairy world not only building a creamery but equipment it is a very large expense.
One of our goals about out mobile creamery is not only the possibility of increasing our production but also for it to be an educational tool and to show other people in the cheese business that we can make cheese investing a small fraction of what a traditional creamery could cost.
Still micro-dairy equipment cost is high. So here we are, asking for your support and your help to make our artisan cheese business grow to the next level.
How can you help?
The biggest way you can help is:
- Contribute with our campaign: we have lots of fun rewards for contributions of all sizes. T-shirts, pie, cheese making classes, mugs, stickers... farm dinners and we'll be adding a couple of surprises along the way!

Our goal is to raise $16,000, it will not cover the total of the project but with some financing and personal savings we want to take cheesemaking to the next level!
Please, it is important to us that you are aware that Funding on Kickstarter is all-or-nothing.
No one will be charged for a pledge towards a project unless it reaches its funding goal. And we will not be able to receive any of the pledge money unless the funding goal is reached.
Our Vision and What's Next
The mobile creamery is a unique and revolutionary project, one if its kind in NC, an educational tool to reach out schools, fairs, college campuses, for exhibitions and markets as a way not only to showcase our product but also our production methods.

Risks and challenges
We have worked on this project for a long time to make sure it is doable from the financial standpoint as well as to make sure that at the end we have built a creamery that will comply with all the requirements a creamery in NC needs to have to be approved.
Inspections and construction days lay ahead; it will be a long journey but we are confident it will be rewarding at the end. We can’t wait to take the creamery to places where you can see what you have help us build!
