Have you ever been to the Goldfish Tavern in North Tacoma? Were you heartbroken when it closed on Halloween two years ago? Well, its time to clean out the cobwebs and build a neighborhood gathering place we can all be proud of. "The Defiant Goldfish" will be a family friendly bistro and bar.
The Defiant Goldfish is located at the very North End of Pearl Street at the entrance of the Point Defiance Zoo, Point Defiance Park and Vashon Ferry Terminal in Ruston.
The definition of defiant is someone or something that resists behaving or conforming to what is asked or expected.
An example of defiant is someone who is told to do something and immediately does the opposite.
The Defiant Goldfish is set to open in the historic Goldfish Tavern building in early February. Our main focus in the bar will be the seven Craft Breweries in Tacoma and the rest throughout Washington. We will a have a drink menu of Specialty Cocktails that are as delicious as they are unique. They will spotlight the many Craft Distilleries that are popping up all over the state.
We will be opening at 6 am serving breakfast sandwiches, light and healthy meals, baked goods, as well as espresso's, coffees and teas. Or you may just want a bloody start to the day for Mary, or some aged agave to sip on as you watch the sunrise (corny?)
We will have a great tap selection, and be tended by people that are beer and cocktail fanatics. We will have a great top shelf liquor selection and fantastically priced happy hours. The Defiant Goldfish will be a fun laid back place to hang out with the family and friends and make new friends who like a great cocktail or beer, and a meal.
Our food menu will have on an array of comfort foods and pizza's. We will also have a great selection of healthy and calorie conscious choices, as well as vegetarian, gluten free, AND Vegan options. We plan to source our ingrdients from local farmers as much as possible. Our recipe's may be global, but our shopping will be done locally.
Adam Dopps has been a part of the opening of several different restaurant and bar concepts. He has worked as a Corporate Manager for multiple different national and international restaurant and bar chains. He also worked as a Business Consultant, working with small businesses all over North America. He has owned and operated multiple successful restaurants and bars of his own, giving him the necessary experience to lead the project of transforming this local landmark. (Plus, he really really likes the bar business :)
Corey Webb has been in the restaurant business for nearly 30 years, opening dozens of locations. He has worked as a Corporate Manager for international restaurant chains, and also worked as a Business Consultant working with small businesses all over the Northwest and Alaska. He still regularly caters for groups of 100 or more.
This is our baby. This is where we have decided to spend our days until we retire. We WANT to do this. But we need your help. When we found out the Goldfish Tavern was available, we were hesitant because the project would be financially challenging. But we decided to go for it and put this team together to bring back the new and improved version of the iconic tavern, We planned on opening the Defiant Goldfish sometime in the middle of 2015, then the City of Tacoma made us aware that the non-conforming use status of the property was in danger of running out. We were told we would have to move fast, because if someone didn't open it back up as a tavern very soon, the tavern would revert back to residential zoning and possibly never be able to open again. That date was literally within weeks, so we had to move up the time frame from "sometime next year," to "RIGHT NOW!"
We had to immediately sign a lease and get the blessing of the city's zoning and land use department, and agree to submit plans to open very quickly. There was little time to line up funding or investors prior to signing the lease. That is the reason for this campaign. Our personal funds will only take this project part of the way. We need the community's help. We need your help.
How we will use the money
The building is in need of a lot of work: There is a lot of deferred maintenance that needs to be addressed. There are leaks in the roof, one of which let's a steady flow of water run through the electrical box. That box, as well as most of the electrical is being replaced. The floor has been poured at different times over the years and is at several different levels with a deep whole in the middle of the room. The old walk-in was not up to code and needs to be replaced, not to mention it is sitting where the kitchen is being built. The exterior stucco has moss and weeds growing out of the many cracks in the walls.
We need kitchen equipment, as well as the furnishings and decor. We are using recycled and re-purposed materials as much as possible, going for a modern industrial feel.
The money will also go towards our opening inventory of food and liquor.

If we come up one penny short, you won't be charged. But don't worry... we have a pretty good chance of succeeding here.

Risks and challenges
Although we have a solid plan, and have gone through this several times, there is always the risk of delay due to construction, city, health dept, liquor board problems. There is a lot of red tape, but that is why we started going addressing as much as we could before we even had a lease.
The bulk of the rewards are for after we open. We are planning on making the physical items, like shirts, available before Christmas. Due to ordering around Christmas, there is the possibility of running into timing issues with manufacturing since we won't be able to order rewards until we are confident that our project is going to be fully funded.Learn about accountability on Kickstarter
