About

The Upside will be a restaurant in Provo, Utah that serves delicious, healthy, local food. It will be a venue for local music, art, and film. The Upside will build community by giving it a space to grow. Check out our website at www.upsideprovo.com

How will The Upside make a difference?

By supporting local agriculture. The Upside will buy its food from local, organic sources, thus reducing fossil fuel, pesticide, and fertilizer use. Using local food will also enable us to limit unethical practices in the food production. We will focus on produce appropriate to our community's climate, and as a result, introduce people to more sustainable flavors. Our rotating seasonal menu will adapt to what nature provides, rather than forcing our food demands on nature.

By serving healthy food. Everyone knows that most fast food is unhealthy, yet people continue to eat this way because it is convenient and cheap. Most healthy restaurants charge high prices that exclude lower-income groups such as students. Many feel that they do not have the time or knowledge to prepare balanced meals for themselves every day. In addition to the standard Panini menu, The Upside will offer a rotating menu option that changes daily. This variety allows us to introduce new flavors to our customers and to adapt to use seasonal produce. The Upside will provide healthy food for the entire community by serving quality dishes that are delicious and inexpensive.

By training the unemployed. The Upside has negotiated a partnership with Deseret Industries, a nonprofit, vocational rehabilitation training facility, to provide skill sets to unemployed persons interested in careers in food services and events management. Through employment and job training at our restaurant, these skills can assist them in finding permanent employment, giving them the experience they need to land and hold the job they want.

By hosting performances, screenings, and art. The Upside will decorate its walls with local art, host live musicians in a variety of genres, and screen local and other independent films. With the closing of several art galleries due to the recent recession, Provo's artists and musicians have few venues for their work. Filmmakers also lack a central venue for their work. The Upside will provide a place for people to experience the creative work of their community. The Upside will also sell paintings, CDs, and DVDs for artists, musicians, and filmmakers both in the restaurant and through our website.

By providing free space to charitable organizations. Many charitable organizations need a place to meet, but cannot afford to rent facilities. The Upside will schedule out space to these groups free of charge.

By making a conversation space. The advent of internet communication has reduced face-to-face interaction in our geographical communities. Provo, Utah, has virtually no coffee houses or bars where the student population can meet and express themselves. The Upside will be a clean, comfortable environment where students can interact. We will design The Upside with several larger communal tables where people can meet new people they would not usually encounter. Since The Upside will be affordable to most people, it will be an ideal place for all walks of the community to converge and converse.

By employee ownership. Most employees do not share ownership in the business they work for, possibly creating detachment from the success of the business. We want to give employees the benefit of sharing more fully in the fruits of their labor through an employee-owned business. Benefits of employee-owned businesses include creating stock options for employees, less turnover and the costs associated with retraining, and better performance by the employees. Employees who feel like they are fully a part of the business share more deeply in the joy of success and the responsibility for making it happen. The Upside will be run by its owners and owned by its runners.

By minimizing waste. The Upside will replace disposable products with reusable products (plates, napkins, utensils), give surplus food to the local soup kitchen, compost compostables, and recycle recyclables, thus minimizing our landfill space. The Upside's proposed location in the center of the student population also encourages customers to walk or bike instead of drive to the restaurant, promoting a common good, clean air in Utah.
