The funds from Kickstarter will be used to purchase larger mixing, extruding, and packaging equipment for the edible Rainbow Dough as well as to move into a larger facility.  My search for an outsourced manufacture has been frustrated by the need to keep the candy allergen free and the simplest solution for this is to manufacture it myself.  I have researched the equipment needed based on quality control and packaging design and what I have planned is very do-able. 

I am an instructor chef and a food safety instructor/proctor.  I also have family with food allergies and have worked with gluten free standards for over 18 years.  I teach my students how to cook allergen free as well.  I believe my standards for safety and sanitation are higher than most.  I want this candy to be available to as many children as possible.  I have had the experience of having my youngest son excluded from the group treat because of his gluten allergy.  Parents with similar children know what I'm talking about when I refer to that look of disappointment. 

The only sure way to monitor the quality and safety of the Rainbow Dough is to make it myself.  I have been fortunate to have taught and worked with more that a few amazing individuals, of all ages, that have followed along as I developed the candy.  I don't plan on stopping my teaching career.  I honestly love what I do. However, I see an opportunity for several of these younger, up and coming, chef/business venture's to build their futures as well.

Through out the testing phase, and beyond, I have been excited by how well the Rainbow Dough has worked in other aspects in addition to child's play.  I have been approached by physical therapists, those working with young children on small motor development (kids put everything in their mouths), as well a individuals working with Alzheimer's patients.  The Alzheimer's patients were also putting things in their mouths and the therapists who worked with maintaining motor skills had to change from shaving cream to whipped cream for their more advanced patients. The idea of having a playing dough/molding clay replacement that was safe to eat and tasted really awesome (bonus), was an exciting alternative for them in their treatment plans.

Another aspect of the Rainbow Dough is as a tasty fondant replacement.  I decorate cakes professionally and have spent hours on placing and decorating with fondant only to see it peeled away and left on the plate when the cake is cut and served.  Clients like the look but not the taste.  The Rainbow Dough not only tastes incredibly good, but it has been shown to be easier to work with.  Selling it in larger batches is a not to distant future plan. 

Risks and challenges

Some of the risks and challenges to making the edible Rainbow Dough is maintaining the high standards of safety and sanitation. My current space is small. I haven't been able to share space with other groups due to the possibility of cross contamination. Once funded I will be able to move into a larger, yet still safe environment where I will be able to make the candy faster even with the small equipment I have now. I will then be able to purchase the larger equipment which will let me fill orders much faster. Safety and sanitation are areas I specialize in. I teach allergen free cooking as well as practice it at home with my youngest son. I feel very confident that I have made a safe candy for children and I will not compromise my standards. This may require time in finding the right facility but my research has shown several great options which are very exciting.
Though the production may be slower initially, until the large equipment can be purchased, I have an incredible support group who have helped throughout the testing and trials and continue to support me as we get this company up and running.
Another area that requires timing is with the flavors and food colorings. They are all natural and made fresh to order, which takes up to 2 weeks to fill. I am very proud of the fact that edible Rainbow Dough is an American made product. I have been working with a company in California that does the all natural and even organic flavors and colors and I feel that this quality makes the Rainbow Dough even better. The colors are bright and the flavors are amazing. They know of the potential of this product and are as excited as I am to work together.
