Ceiling, sanding, sampling & shopping
Well, we still have a bit to do but we are definitely making progress.
It has been a huge job getting the building up to council standards - it's an old building and there are a lot of regulatory requirements to meet. We have completely rewired the whole building; put in new plumbing and drainage; poured a new concrete floor; bricked up old doorways and windows; built walls for a new bathroom; relined walls; and put in a new fire-rated ceiling (sadly hiding the original beams I loved). What a job! The decorating and equipment installation will start next week which is exciting.
This whole process has taken so much longer than I expected. I eventually came to accept that it will just take as long as it takes and there is no point in getting stressed and frustrated. Whenever someone asks when the opening date is I just have to say that no-one wants us to open more than I do!
While the tradesmen are working away on site I have been focussed on finding staff, developing the menu with my brother Pete, purchasing equipment and painting furniture, while Dylan has been programming the point-of-sale system and website. Everything is gradually coming together!
