I'm so glad you dropped by to look at our project!
We always loved to share our deep passion and LOVE for Apulian food, and I hope you are as excited as we are in opening our first location here in the Netherlands.
Panzeró will become a reality thanks to your support!
WHAT IS PANZERÓ?
Panzeró Apulian StrEat Food is our new brand, which got its name from our main product, panzerotto.
Panzeró Apulian StrEat Food is a place where Apulian tradition and authentic ingredients MADE ONLY IN ITALY (APULIA) meet, creating a crispy, golden brown, delicious treat well-known in Italy and soon all over the world.
Our aim is to establish a street food chain. In order to do that, we plan to open the very first location—our pilot-site.
It will be a special place where we will test our daily processes, preparations, training, purchase of ingredients, and all the other steps required to standardize the format, ensure the highest quality product, and open future locations.
After that, we will start in other European countries and overseas as well!
WHAT IS PANZEROTTO?
Panzerotto originated in Puglia, also known as Apulia , a southern Italian region famous for its fresh and traditional cuisine. One of the most popular Apulian dishes, panzerotto is a deep fried pocket of dough stuffed with a variety of scrumptious fillings; some of the most common are mozzarella, tomato and oregano; some other versions include smoked buffalo mozzarella, pesto, broccoli rabe, and infinite other combinations from savory to sweet, such as dark chocolate, dried figs and fresh Murgian ricotta with quince. Panzerotti are deep-fried quickly to achieve a perfect golden brown crunch and are very handy to eat in any situation, including strolling down the street, returning to the office, eating at home, munching anywhere, anytime.
Well, if you walk around you can see many Italian places to eat, and all those restaurants, pubs, pizzeria etc., etc. offer typical Italian food like pasta, pizza and other common dishes.
Now what you see are only some of the traditional foods of Italy, but only a few.
And in most cases, the ingredients in your pizza or on your pasta are NOT MADE IN ITALY. Rather you are sold something that sounds Italian, but in fact is not Italian at all!
I’m not saying all Italian food shops are counterfeit, because I’m sure there are places that offer good quality products, but not many do!
Our philosophy is very simple: WE WILL NEVER COMPROMISE!
Either our ingredients are Apulian, or we won’t serve them in our food at all! We are very strict in ensuring the authenticity of our panzerotti, consistency of our advertising and standardization of our business processes.
We are people who keep our word and INTEGRITY while producing a superior and delicious portable feast.
Last December, I received a phone call from Mimmo—longtime friend from my hometown, Francavilla Fontana, Apulia—and when my phone rang, he said: “Why don’t you come to the Netherlands? You’ll find many business opportunities here, and we can open a food shop together to revive our Apulian tradition and help people discover that pizza and pasta are not the only Italian options they have.”
So I took Mimmo’s word and bought flight tickets. A week later, I was in Rotterdam! In the next few days, we started to meet new expats like us and new Dutch friends.
From time to time we invited them to my house, where I prepared panzerotti. They immediately asked, “How come we never tasted anything so mouthwatering and so different from the other Italian foods?”
Well, the answer was so obvious to me because that week Mimmo came from Italy with flour, mozzarella, tomato, oregano and other fresh ingredients from Puglia (he goes to Italy every two weeks for work responsibilities), and I prepared panzerotti using those ingredients.
The results and response we received were so positive that we immediately started to think about ways we could transform that enthusiasm into a profitable business.
As we kept going, many other Dutch people tried and loved our products, and with lots of effort, persistence and willingness to offer something “different,” our desire just kept growing inside our hearts.
Now, it was only a question of, HOW DO WE GET THE MONEY TO OPEN OUR FIRST LOCATION?
My immediate response was: KICKSTARTER, and we truly hope this will be the place where we can re-write our STORY.
WHY NOW AND WHY START FROM THE NETHERLANDS?
The answer is so simple. By doing a lot of research, we noticed that Dutch people are very attentive to food quality; they love to eat well and at reasonable prices. We had been looking at the market here in the Netherlands for the past six months, and none of the existing businesses were doing what we intended to do! And that’s because they only offer what people are familiar with! We have been studying the prices, how much it would cost to procure the right ingredients, how much filling to put inside each panzerotto, and how much people are willing to pay to get the best food, and as I said before, ingredients sourced only from Apulia.

WHY DO YOU NEED 80,000 EURO TO OPEN PANZERÓ Apulian StrEat Food?
Opening a location, especially the first, requires a big financial investment!
We calculated everything. In order to open our first location, we need to sign a contract and cover at least two years of the lease and focus on other business considerations with peace of mind.
We need to refurbish the shop and have the right electrical system, exhaust system, layout, quality laboratory, all equipment, and fuel to allow the business to begin successful marketing.
All those things have a certain cost, plus we need to give 5 percent to Kickstarter to fund our project, 3 percent to Amazon as a fee transaction, and most importantly, we have to keep our word to all the backers!!
Delivering a gift is a not a joke, especially when you don’t know and can’t possibly know how many backers will support the project!! And from where?
So for this we also developed a budget in the amount of money we are asking for, to fulfill what we promised!
We’re also aware that with Kickstarter: EITHER YOU GET EVERYTHING OR YOU GET NOTHING!!
With this in mind, we sincerely hope to achieve our target, which is quite big and scary at the same time because we only have 33 days to fund our project.
For example, if on the last day we have 79,000 euro out of 80,000 (the latter, our goal), we won’t get anything!
We want to share ALL of the ups and downs with you, from the very start, WHICH IS NOW!!!
Risks and challenges
For sure there are lots of risks and challenges like any other start-up and business out there. Risks in finding the right location, risks in finding the right suppliers and workers to make the project happen! We are budgeting carefully for the things we need to do, getting the right suppliers and studying the right marketing strategies in order to get customers. Life is challenging, this project is challenging and we are ready to share with you all the ups and down that will find along the ride by updating you about our achievements and “solutions to find.”
