I'm a Japanese chef and cookery teacher. My siblings and I grew up in London. Our dad was Japanese so we ate Japanese food at least once a week. Our mum (who's Scottish) lived in Japan and learned to cook Japanese and then taught me.
Our midweek favourites were casual meals like chicken kara-age or pork tonkatsu. At weekends we had more elaborate, social meals such as shabu shabu. That's where I started to get involved in cooking, washing rice and making dipping sauces....
