Now that we know that we're getting the smoker I have been dreaming off all of the things that I can do with it. I know that we're going to make Chipotle Flakes more often. I've been thinking that a Smoked Ghost Pepper hot sauce would be amazing. Maybe some Chipotle Powder (if I can get my old coffee grinder to grind it fine enough). So I've added a couple of reward levels. Any additional funds raised will go toward the new kitchen that we're building.
Here's the original goal that y'all made possible:
So, folks really like our smoked hot sauces, like Smoked Onion, Maple Rum Chipotle and Rum Barrel Fermented Smoked Jalapeño. Smoked Onion has won awards! And Rum Cask is just stick a fork in me and call me done delicious (not to mention our most coveted hot sauce). But I often get asked for MORE smoked hot sauces. Like something with smoked peppers and available all of the time in stores. But smoking takes time. And a lot of it in our little 900 square inch home-smoker. It would take us 8 days of feeding/attending the smoker every 30 minutes to smoke enough peppers for one big batch of chipotle hot sauce.
So there’s a disconnect between what we can do and what people want us to do. And there is little I love more in this world than solving problems and fulfilling folks hot sauce hopes and dreams. But we need your help.
The smoker we want would shrink our smoking time from 8 days down to 2. But, most importantly, because it’s a commercial smoker, it does all of the hard work and doesn’t need attention every 30 minutes, like our darling little home smoker. We can set it up and then head off to make hot sauce, ship web orders or drink beer (ok, really pack granola while thinking about drinking yummy Vermont beer after our shift is done).
$9000 would get our smoker made, delivered and running. If magic happens and we get more than that, we have a whole other project going on that would love some funding. A little over a year ago we expanded from 450 square feet to 3000 and we’re already running out of room. So we’re building a second kitchen within our walls to increase capacity for both our own production and the other companies that rent space from us to do their production. This new kitchen will cost us about $13,000 for a new sink/plumbing, ovens, electricity and carpentry. This will move the bakery out of the savory kitchen and allow baking and hot sauce to happen at the same time. My plan is to take out a loan to pay for the new kitchen but having it prefunded by our fans would be simply amazing.

Risks and challenges
