Liz's Artisan Manifesto...

Liz's cookies don't contain chemicals, additives, fillers, flavorings, or preservatives. Just good stuff you'd use at home. Surprisingly, even most so-called natural cookies contain stabilizers or other industrial ingredients. It's Liz's innovative recipes and artisan baking techniques that give our cookies a traditional flavor and texture, without eggs, butter, and (in our gluten free line) wheat flour.
EATEN (ALIVE) BY SHARKS!
On Friday, September 28th, we were on ABC's Shark Tank, trying to raise the capital for our project. Despite Dan's amazing sales skills, and Liz's heartfelt story, the Sharks didn't bite. They just didn't "get it". Mark Cuban understood the market for Gluten Free products, but he wanted 33% of our business. No way!

FLOODED BY IRENE
Summer 2011, we spent every night building our first retail store in Vermont. We invested countless hours and nearly $20,000 in inventory and construction supplies. Three days before opening, Tropical Storm Irene ripped through the Mad River Valley and destroyed it.
Water was waist-high destroying our stuff, the floors, the walls, even the foundation of the landlord's building. Flood insurance didn't apply because we hadn't even opened, so we lost the whole thing. We haven't had the time, money, or heart to try again. Fortunately, our main bakery location was left untouched.
OUR EXPANSION PROJECT
Our biggest request is for more local stores to carry our cookies around the country. We have some big deals percolating to make that happen. But we need to be able to make MORE COOKIES!

$100,000 ~ With another additional $25,000, we can release the long-requested single-cookie-pack. That's one Liz Lovely cookie in one bag. Liz's cookies are fragile, and a single cookie needs a backing-card to keep it from crumbling in the bag. We would spend $20,000 on a "friction feeder" to place those cards, and $5,000 to setup the new packaging.
If met, all backers $200 and over will receive 6 assorted, Gluten Free single packs shipped to their door when they are released sometime in 2013.
Risks and challenges
We were not successful at Shark Tank, but we were able to borrow some of the capital we need. So we ran this Kickstarter (at the urging of our fans... you guys!) in hopes of raising the rest of the money we need to expand. If we are successful in getting the project funded, here are our biggest challenges:
(1) GETTING PLACED IN STORES
It's not as easy at it sounds. If we can't get the shelf space, then we won't be able to support the additional overhead this project creates. So, we are also hiring two inside sales reps to relentlessly call and email buyers to get those cookies out there! With Dan's expert sales training, we know they will be successful.
(2) REACHING OUR PRODUCTION GOAL
We believe that we can double our production with this fairly limited investment in new equipment. The oven, chocolate enrober, and packaging machine stay as-is. Liz has the challenge of "phasing" each production day. She's already started designing some complex spreadsheets...
(3) STRETCH GOAL #1
Third Party Certifications can require fairly significant changes to the way a company operates. If we are unable to accommodate a requirement, we may not qualify for all of them. That said, we have been thoroughly inspected by the FDA with amazing results, so we're confident that we can design a processing plan that meets all the guidelines.
(4) STRETCH GOAL #2
There are some unanswered questions with the single pack. Will the shelf life be the same? Will the cookies hold up to handling? Will a single cookie hurt sales? We're not sure, but we believe that offering our best sellers in singles will be a good thing, and we're committed to finding the right answers!
