About this project
The Project Focus
Our aspiration is to open a kombucha draught bar in Sacramento, California, that focuses on hand-crafted kombucha served on draught in pint glasses. Kombucha Kulture will feature up to ten distinct varieties of kombucha on draught developed by small brewers located mostly throughout Northern California. We will also carry exceptional non-local kombucha. To compliment our drinks, we will offer fresh wheatgrass, fruit and vegetable juices, all organic and locally sourced, as well as a variety of sandwiches and baked goods prepared by businesses in Sacramento.
Kombucha Kulture's Primary Product
Kombucha is a probiotic health drink produced by fermenting tea and sugar with a live culture. The flavor is crisp, refreshing and reminiscent of a fruity or cider. Though the exact origin of kombucha tea is unknown, it has been a part of the Chinese culture for at least 2,000 years and has been referred to as "the elixir of life".

Kombucha Kulture's Environment/Vibe
We have found a beautiful location in Midtown, Sacramento that has already been built out for a business like ours. We want to make it our own and add a warmth and character that reflects the complexity of kombucha itself. We plan to renovate the interior using green construction methods and recycled materials, which will lessen our environmental impact and reduce costs. Some of our planned improvements include constructing countertops and tables using 150-year-old salvaged walnut hardwood and refinishing floors with eco-friendly concrete and stains. We will also purchase building materials from the Habitat for Humanity ReStore in Sacramento.
Kombucha is a novel product to many people and we plan to incorporate an element of education in our business that will help guests gain a familiarity with kombucha, and in turn ensure repeat customers.

To employ a knowledgeable and caring staff who will educate inquiring patrons on the vast health benefits of kombucha in order to create a loyal customer base. To broaden the appeal of kombucha as a healthy addition to the specialty beverage market.
Company Goals and Objectives
To create a profitable business that will allow us to bring this healthy drink to as many people as possible and share this probiotic-rich beverage to better the lives of those who consume it.
Our goal is to bring draught kombucha to the mainstream in the same way entrepreneurs have created a culture around coffee. We want to create a "kulture" around draught kombucha.
As demand and sales grow in the functional beverage market, many consumers have already discovered the benefits of drinking kombucha, and those still searching for a healthy, detoxifying beverage will eventually come across it. Our goal is to intervene and bring this healthy elixir on draught to the masses in a welcoming environment rife with knowledge.
We understand that a startup business is a highly complex undertaking and essential to this undertaking is a strong, knowledgeable support system, which we have created. Included in this support system are kombucha brewers, local business owners, a local attorney, a marketing specialist, a local contractor and many more experienced individuals on hand and ready to help.
Kombucha Market Research
Sales of kombucha and other “functional” juices in the United States topped $295 million in 2010, up 25% over a two-year period, according to SPINS Inc., a market researcher.
“It’s become incredibly trendy lately in the 20-to-30-something, foodie, intelligentsia set,” said Dr. Daphne Miller, a family practitioner and professor of nutrition and integrative medicine at the University of California, San Francisco. “Kombucha is like their Coca-Cola.”
Growth seems inevitable: Market researcher SPINS projected $110 million in Kombucha sales in 2011, not including Whole Foods, meaning the entire category is expected to top $200 million. Meanwhile, privately commissioned research by industry insiders shows kombucha sales moving north of $500 million by 2015.
Industry research estimates that Whole Foods sells approximately 110 cases per week/per store, amounting to $75 million worth of the trendy fermented tea in 2010–almost 1% of the company’s total revenue.
