After living in Italy and creating and operating one of the most successful restaurants in St. Louis, Katie Lee is now ready to open her dream restaurant! Katie's Pizza & Pasta is an amazing new artisan Italian restaurant by Chef Katie Lee & her fiance and business partner Ted Collier. Katie & Ted want their new restaurant to be backed directly by the community, so they have chosen Kickstarter as a platform to sell their dream and gain support! This new restaurant featuring an 'all in-house' artisan Italian menu has been the real dream and goal since Katie created Katie's Pizzeria 5 years ago. Katie's Pizzeria was an amazing experience for Katie to hone her craft and gain invaluable expertise in running and operating a successful restaurant. Now she plans on opening her own restaurant and owning her creativity and success, and she wants YOU to be involved all the way to the opening of the doors at the GRAND OPENING PARTY!
WHAT IS KATIE'S PIZZA & PASTA
Katie's Pizza and Pasta is a new unique artisan Italian restaurant built on the foundation of the successful Katie's Pizzeria in Clayton Missouri, which was founded and operated by Katie Lee in 2008. This new restaurant will take advantage of the success of Katie's Pizzeria while capitalizing on new opportunities at their new location, and a new changing market.
Katie's Pizza and Pasta will be known for chef Katie Lee's award winning, in-house, handcrafted pies, with toppings that are unique, exotic and seasonal. The new pasta menu will follow the same path of old world preparation, mixed with a fresh approach and new modern techniques. The execution at Katie's Pizza and Pasta will add a theatrical element with an open kitchen and wood burning oven, as well as colorful house-made pasta's drying throughout displays in the restaurant. The goal for the menu is to wow all guests and remind them or introduce them to real Italian artisan cooking that they will want to share with their friends and family. We want our guests to experience real artisan Italian cooking with all of their senses...a culinary show of sorts. The beautiful artisan pasta in all shapes and colors will be drying on racks throughout the restaurant. The wood burning pizza oven will be exposed to the dining room. The wall behind the bar will showcase a living green wall with herbs growing for our menu and designer cocktails.
Katie's Pizza and Pasta will build on this recipe for success by adding new and exciting products and services that we feel are needed, based on our years of experience in the restaurant business. We believe that in order to stay on top, we must constantly investigate new ways to increase revenues, increase profits, reduce costs, improve efficiency, improve customer relationships, increase productivity and grow our business. Our idea is to build on our bright spots, and improving what we have, innovating and adding what we don't have, and protecting what we already have. We will constantly be evaluating our business, always improving.
The Katie's Pizza name and brand has a sterling reputation in St. Louis that has been watched, emulated and critically acclaimed since she opened almost 5 years ago. We can only assume that Katie's Pizza and Pasta will be highly anticipated and create a huge buzz by the St. Louis press and critics along with her loyal and large customer base and following. Katie Lee and Ted Collier not only plan on creating one of the best and busiest restaurants in St. Louis, but they also plan on ensuring and executing it's success by being working owners and hiring an honest, experienced and dedicated staff.

The design and atmosphere at Katie's Pizza & Pasta will follow the same innovative and comfortable approach of the current Katie's Pizzeria. Katie's Pizza & Pasta will be cutting-edge, urban chic with a nod to mom and pop warmth by using antique and handmade furniture mixed with modern warm lighting, and custom artwork and murals. It is our desire for our guests to be instantly wowed, feel comfortable and relaxed and proud to be there, have meetings there, and bring out of town clients or family for a special lunch or dinner. Our open kitchen concept will have a theatrical feel and the hanging pasta will reinforce the artisan quality of the menu. The bar will be beautiful and unique and will showcase a living green wall with herbs, as well as a projector playing old Italian retro films. Our guests at Katie's Pizzeria regularly comment on the design and feel of the restaurant saying that it reminds them of Europe or the coasts. We want our guests to feel like they are somewhere unique and special, so that they talk about it when they leave to spread the word.
The floors will be polished concrete with a hand painted mural/design by Belinda Lee.
THE CEILING & WALLS
The ceiling will be high and exposed with driftwood installations by Ted Collier, hanging to give depth. Some walls will have custom murals by Belinda Lee, some will have abstract shelving, mirrors and storage.
The furniture will be mismatched antique hard wood and custom furniture by Ted Collier. Ted makes amazing dining room tables out of repurposed 100 year old doors which we will mix in with the antique tables and chairs.
Lighting will be warm, dimly lit, unique, mismatched pendants, tons of candles, and can lighting around windows to make the restaurant glow from the street.
The bar will be a custom, with sleek lines made out of repurposed wood. The bar will also feature a living green wall growing herbs, that will be used in our signature cocktails. There will be a projector playing old italian and retro films at the bar as well.
The kitchen will be the focal point of the restuarant. We have decided on an open kitchen design so guests can enjoy the artisan cooking process. There will be firewood lining the walls, a wood burning pizza oven and large rustic butcher blocks on a counter where food will be presented for servers to pick up.

We have found an amazing location in Rock Hill, but will not secure it until we get our funding. The space is on a high traffic count street that is easily accesible from highway 40. The location is centrally located near webster, kirkwood, glendale, brentwood, ladue, and des peres! We are excited to bring our restaurant closer to these wonderful municipaliites. The physical space is appx. 3000sq ft with high ceilings, big windows, and concrete floors.There is also a large beautiful patio available for our use. Our general contractor has been through the space and found it to have all the systems we need for the build-out we are requesting. The good news is that there are several spaces available in the same building, so we feel confident we won't lose the location. With your help we will be able to secure this location to begin building KATIE'S PIZZA & PASTA!
Ted and Katie have been looking for spaces for the last 6 months with their real estate brokers Kent Hirschfelder and David Wright and have found mulitple locations that fit their criteria, so that if one location falls through they have other viable options to fall back on.
Risks and challenges
The biggest risk we face is that we do not reach our funding goal...However, we feel very confident that our business model, Katie's experience, and our amazing rewards for backers will attract the desired financing.
