Bivouac Ciderworks: born in San Diego, CA
Our mission: To create superior artisan product through innovative exploration. To grow a culture of collaborative excellence. To inspire and be inspired by our community.
After many years of home brewing, passionate obsession, experimentation, knowledge seeking, far flung adventure, and culinary
travel ... we had the crazy dream of opening a cidery in our community.
Our goal is to build an exploratory home for our creative and adventuresome "family." A place where we can experiment, innovate, and be inspired. Where our friends can pull up a stool and share the excitement of our latest concoction over a good meal. A refuge to ply our artful trade and compete with the best in the world. A haven from the daily grind where a good friend and an entertaining conversation is only a glass away.
And while we were deep into plotting and planning, navigating licensing and permitting, honing our cider-making, and generally running ourselves through the ringer to make our dream a reality, we realized we needed (as all great explorations do) collaborative help. That's where you come in!
Our aim is to open our flagship tasting room in April, which is just around the corner. This Kickstarter campaign will enable us to purchase the additional stainless steel tanks and equipment needed to make the most enticing of elixirs. The funds raised will also help us get our delivery vehicle up and running in order to grow our distribution around town.
In the past few years the cider market has grown rapidly in Southern California, but most of these sales were sucked up by large corporations with big marketing budgets (not that there's anything wrong with that). And while the big players have raised the visibility of cider, San Diego still does not have a cidery to call its own. This means that you aren't getting the highest quality and freshest product like San Diegans get with craft beer. We will change that sad fact.
Speaking of craft beer, we are huge fans! We are borrowing from the San Diego brewing community's know-how and experimental playfulness and applying it to a new medium---cider. We intend to be at the forefront of innovation in the cider world, so don't expect the sweet low alcohol styles to make many appearances in our tap room!
The Cidery/Tasting Room:
It took us nearly a year scouring most of San Diego's awesome neighborhoods to find the perfect spot in North Park to open our first tasting room. Our tasting room, located at 30th and University, will feature a full menu of delectable fare to accompany not only our cider, but also the select local craft beer and wine we will serve.
And in keeping with our core (pardon the pun) values of adventure seeking and fostering connections with nature, we will make charitable contributions to the National Parks Foundation and other nonprofits dedicated to protecting and preserving America's wild open spaces.
Our motto: Rêvons plus grand - translated from french "Dream bigger"

Risks and challenges
Risk involved require us to continue the wading through government permits, rules, and requirements. Our challenge on construction is mostly mitigated by the incredible team we have behind us . Check them out!Learn about accountability on Kickstarter
