My name is Michelle and I am 27 years old, and I have always had a passion for baking. Three years ago I transformed my life by switching to a gluten-free, cane sugar-free, and Paleo diet. Having a sweet-tooth, I quickly realized that the availability of my favourite baked treats was almost non-existent. Dedicated to feeling so good and empowered by my new relationship with food as fuel and medicine, I was determined to find a way to create healthy bakes. With a lot of trial and error and mountains of cake-battered dishes later, my health-inspired recipes were finally perfected!
With a rejuvenated belief that anything was possible with natural grain-free and cane sugar-free baking, it became clear that something special could come of this discovery - and that 'something special' turned out to be The Butternut Baking Co.
THE BUTTERNUT BAKE SHOP
The Butternut Baking Co. will be the first bake shop in Toronto to specialize in 100% gluten-free, grainless, and naturally low-carb bakes that are made without the use of cane-sugar. Our treats are entirely crafted from wholesome ingredients that are celiac, diabetic, and paleo friendly. (Click here to check out our full menu!)
As a result of the high-demand for our scrumptious and nutritious treats, we realized it was time to find a permanent home for The Butternut. With your help we will build a bakery at 2743 Dundas Street West in order to provide you with better access to healthier treat options!
WHY WE NEED YOUR HELP
We have the recipes, we have the passion, and we have the space - and now we need your help! In order to transition from small-scale production into a retail and commercial space, we will use your pledges to offset the financial strain of expanding our small team of bakers and to purchase specialized kitchen equipment such as:

- Stand Mixers
- Steel Work Tables
We are hard at work dreaming-up and creating the perfect hangout space for you to come and enjoy treats that will delight your taste-buds without the added guilt! With a lot of paint, hard work, and cake-breaks, the space is transforming daily.

In every bite of each one of our treats, you are consuming all-natural ingredients that are always 100% gluten-free, grainless and naturally low-carb. We have refined and perfected each recipe; tweaking flavour and texture while ensuring you are getting the most tasty and nutrient packed dessert on the market! We craft our delicious bakes with Paleo inspired ingredients to bring you classic desserts that are energy boosting and diabetic friendly.
Our ingredients include:
- Almond, coconut, tapioca flour
- Small amounts of natural sweeteners (monk fruit, raw honey, coconut nectar, stevia, dehydrated maple syrup)
- Organic fruits
- Natural extracts
- Natural colouring
- Coconut oil
- Coconut and almond milk
- Butter and/or organic eco-sustainable palm shortening*
- Seeds, coconut and nuts
- Free-range eggs
We never use:
- Cane-sugar/juice, refined sugar
- Grains (e.g., wheat, rice, corn, spelt, teff, oats)
- Artificial colours, flavours, or sweeteners
- Refined oils (e.g., canola, vegetable, safflower, corn)
*We also have dairy-free options on our menu!
Risks and challenges
I can hardly believe that this dream is finally becoming a reality, and while it is so exciting to see the growth of something so special to me, I realize that there will be challenges that come with this reality. These challenges include: paying expensive equipment invoices, first and last rent cheques, paying contractors, stocking expensive high-quality ingredients, and hiring a small team of staff to help us keep up with the growing demand for our healthy bakes.
I have spent the last few months extensively researching reliable equipment contacts and suppliers in order to ensure I can be as fiscally responsible as possible by utilizing well-maintained second hand equipment. Good commercial kitchen equipment is not only expensive, but a challenge to find. This is why I am reaching out to you to help allievate the finanical strain I am experiencing trying to get this special project off the ground as a young entrepreneur.
I am also passionate about giving oppourtunities to people who seek a work environment that fosters creativity, healthy relationships and healthy lifestyles. As part of a positive work environment, I will seek to provide fair and equitable wages to The Butternut staff.
While construction is under way, the biggest challenge will be keeping things on schedule in time for our spring opening!
