I am very excited to be opening our new kitchen and retail store in San Francisco’s Mission district in a few short months (click here for a map of our new neighborhood). Our new kitchen and store will allow us to produce, display and distribute Charles Chocolates around the world. And this Kickstarter campaign is to help us complete the build-out of each.
My chocolate manifesto
I have always held very strong opinions about what makes a great chocolate—opinions formed over 25 years of chocolate experience (and consumption!) that have guided the development and production of everything that we make.
Key is the belief that chocolates are food—fresh food—and as such they should be made with the freshest ingredients and enjoyed within a few weeks of being made. Our chocolates are not designed to be displayed on store shelves for months before being bought and eaten. We make them by hand when you order them and deliver them to you within a few days of their creation.
I also firmly believe in the idea that what you get out of chocolate can only be equal to what you put into chocolate. In other words, our chocolates are only as good as the worst ingredient in them. This philosophy has resulted in an obsessive dedication to finding the best chocolates, the finest organic cream and butter, fresh organic herbs, fruits and nuts, and not including anything that doesn’t belong (preservatives, etc.).
As a result of our dedication to product first, Charles Chocolates is one of the most acclaimed and award-winning lines of small batch artisan chocolates in the country.

Our new kitchen & retail store
The images below provide the look and feel of our project. With over 75 linear feet of windows looking into the kitchen, everyone who visits will be treated to the fun of watching all our talented chocolatiers creating each of our treats from start to finish—a truly unique experience that turned our former Emeryville kitchen into a destination for local foodies as well as those visiting from around the world.
During business hours, our website will carry a live stream of the kitchen so that you can still experience it even if you can’t be here to see it, but we do hope you will come visit!
About Charles Chocolates
Charles Chocolates has set out to redefine the world of fine chocolate confections. The chocolates are made using the finest ingredients, including some of the world’s best chocolates, organic herbs, fruits and nuts as well as organic cream and butter. Everything is made by hand in very small batches using traditional, artisanal techniques.

Risks and challenges
The biggest risk associated with our project would be the inability to complete construction of our new kitchen and retail store. We have done several things to mitigate this risk, chief among them being an equity raise that preceded our Kickstarter campaign.
In thinking about the other risks associated with a small artisan food company, many of them don't exist with Charles Chocolates. We have a proven and popular brand, we have an amazingly talented team that has proven their ability to produce phenomenal chocolates efficiently and consistently.Learn about accountability on Kickstarter
Shipping is billed separately for several reasons, the most important of which is the variable cost of shipping chocolates all over the world. Also, for the larger incentives we want you to be able to have the flexibility of sending multiple packages to multiple recipients.
We will be happy to work with you to come up with alternate rewards of the same value that can accommodate your food allergies.
We do use nuts in several of our chocolates and there may be nut traces in our other chocolates as a result. If you have severe nut allergies, we suggest you consider not eating our chocolates.
Our Milk and Dark chocolate bars that contain Caramelized Rice Crispies are NOT gluten-free. Malt barley is used during the production of the rice crispies. All our other products are gluten-free.
Though we use many local and organic ingredients in our products when possible, neither the chocolate nor the sugar that we use are certified organic.
No, the chocolate and sugar that we use are not vegan.
