About this project
We strive to provide authentic and uncommon culinary experiences. We craft foods with integrity and serve them up with our one-of-a-kind blend of welcome and whimsy. We enjoy making our foods, and we hope you find them delightful. Our favorite way to share our love of food is our fresh fruit ice pop!
The idea behind our pops is simple - fresh fruit, evaporated cane juice, and whatever other interesting things might go along with those. The pops struck a chord with locals and tourists alike looking for an alternative treat to enjoy on those blazing summer days. The community came out in force to support one of their own on a new (if quaint) venture. Over 100,000 popsicles later, the Hyppo has expanded into a new space on a corner in downtown St. Augustine with other locations on St. George St. and in Gainesville, and continues to vend fresh pops to the downtown crowd. The pops are all now made on larger, much more efficient pieces of equipment that exist in the back of The Hyppo Cafe, a shop in midtown St. Augustine that brings the life and vibrancy of fresh foods to the genres of sandwiches, confections, and coffee. The Hyppo continues to delight customers with inventive combinations afforded by simple ingredients. Since our shop's open in 2010, we have been innovating new flavors continuously: Over 450 to be inexact! Flavors such as Cucumber Lemon Mint, Black Pepper Cantaloupe, Sangria Plum, Strawberry Basil, Bananas and Grace, Dark Roast Espresso, Blood Orange Cheesecake, Guava Hibiscus, Blackberry Goat Cheese, and so many more!
We believe that FRESH FRUIT MATTERS. Our pops are made with fresh fruit- pulled, picked, peeled, hulled, split, sliced, and squeezed by us- never frozen until it becomes a popsicle! That's why we buy fruit when it's in season & we don't blend it until it's ready.

We are really excited to be able to bring the goodness and freshness of what we do with ice pops to people everywhere. The artisan ice pop industry is still in its nascent stages here in the United States, and we want to be part of making it great and making it sustainable. Getting great-tasting-good-for-your-soul pops on the shelf is a big part of that, and we're so thankful for the support and encouragement we've already received from all our family and friends over the last (nearly 4!) years.
With every inch of new territory we cover, we seek to improve and advance our methods and techniques. Our long-term goals include sourcing ingredients and materials on such a scale that we can bring our costs down to compete with major players in the market, and hopefully push the whole frozen treat industry to higher quality and an increased demand for freshness and authenticity. New freezers, new molds, new wrapping machines, and of course new packaging are all a part of our plans this year as we lay the foundation for years to come. Risks and challenges
CHALLENGE: Our production facilities, though under capacity, could reach volumes that strain our ability to efficiently produce the pops, which could delay fulfillment.
SOLUTION: Our setup is scalable and at the point we need to start running graveyard shifts, new machinery will already be on its way to help fill the gap.
CHALLENGE: If the Summer is hot, hot, hot, the pops might melt in transit to all the many destinations around the country.
SOLUTION: Never fear, we have been shipping pops through our online store for years all over the country and have worked out the kinks with a fairly simple cocktail of thick insulation, and copious amounts of dry ice for the road.
CHALLENGE: If our production really skyrockets, we may have difficulty sourcing the fresh fruit needed to make our unique product, which could delay fulfillment.
SOLUTION: We have been very busy making contacts in the produce distribution world, and can order it in by the truckload or drive straight to the farm if need be!
