Healthy Fast Food
Yes, healthy fast food is a possibility! Our vision is to bring delicious and healthy food to you by way of the Vitality food truck. We have been working on this concept for the last five years, developing a menu, writing a business plan, purchasing a step truck, making renovations, and the dream is finally manifesting! Our Kickstarter project is to put the final touches on the Vitality food truck.
As you can see we have a truck, now we need some equipment, decals, a paint job, and minor repairs. Our Kickstarter goal is to raise at least $4,000 to do just this and get this truck on the road so we can serve food to you!
Our Mission is to provide a healthy fast food alternative for busy people who are on the go. We will offer delicious food with gluten-free, dairy-free, raw, and diabetic friendly options. In addition, 'organic' products will be used in the preparation of our menu, because it does no harm to the environment or the people who eat it. Fresh fruits, vegetables, and whole grains will be replace your standard deep-fried, chemical laden, overly processed fast foods commonly found in the industry. In addition, we are embracing the 'buy local' philosophy working with local and regional farm coops to procure produce and provide a 'farm to table' opportunity. Our menu items will be GMO-free.

Vitality Fresh Fast Food has held close to a dozen menu tastings at festivals and private dinners with over 200 surveyed responses. There has been an overwhelming positive response to the menu. Here are just a few quotes of what people had to say:

Here are two important statistics gathered from the surveyed taste tests. When asked, "How often would you eat vegetarian fast-food with local and organic ingredients?" The average answer was twice a week. When asked, "Based on the food you sampled, how likely would you to support the Vitality food truck, on a scale from 1 to 10?" The average answer was a 9. This sounds like a recipe for success!
Who We Are
Vitality Fresh Fast Food is comprised of three owners and operators: Debi Golembieski, manager; Scott Lamb, chef; Sean Martin, truck driver and cook. Together, we have over forty years of combined cooking and restaurant experience. Our culinary backgrounds span from gourmet fine dining to vegan and raw food cooking experience.
Debi Golembieski has had a dream of bringing healthy vegetarian food to the general public for many years and has been working with Sean to develop the concept, business plan, menu, etc. to make it convenient and affordable. Approximately 2 years ago, they met Scott Lamb, an exceptional chef with a similar dream, and they joined forces to fine-tune the food cost analysis and other details needed to bring Vitality into fruition. Together they believe the time is ripe for this idea to succeed as American's want and need a healthy fast food option. Therefore, the Vitality Fresh Fast Food truck will be greatly successful!
Debi comes with a well developed business sense having co-owned and run Green Mother Goods, a local retail store over the last five years. The Vitality food truck will be parked at the convenient Green Mother Goods location daily which is near downtown Boone, Appalachian State University, and on the busy King Street thoroughfare. Together the store and the food truck will compliment one another, attracting more attention to each other, benefiting both businesses as well as all the local farms, vendors, and families they support.
Sean was born and raised in Louisiana where food is an integral part of the culture, bringing family and friends together. This early experience has help to instill a desire to bring delicious foods to others. Since, Sean has been in the restaurant business for close to twenty years, working with traditional American cuisine, cutting edge vegan cooking styles, as well as health spa and fine dining experiences. Over the last five or six years, Sean and Debi have worked together to develop a menu of delicious and nutritious foods, which will be offered through Vitality.
When Scott was young, his father would take him to the 'city', where his father did errands and Scott would hang out at the local health food store. In High School, Scott's parents were owners of a bookstore where Scott would spend time reading. He often found himself reading Adele Davis' books engaged by her wisdom on the benefits of eating with nutritional mindfulness. These events early in Scott's life have helped to shape his view on the relationship between food and health.
Scott received his Culinary Arts degree from Johnson and Wales in 1998, graduating Magna Cum Laude. In 2004, Scott started a small catering company with a friend, The Fresh Chefs - their means of doing business was to serve the freshest organic food that could be found; food 'that did no harm'. As Scott's business partner would say, 'it's either food of love or it's not'. Afterwards, Scott had the opportunity of working with and being influenced by the gifted chef, Mark Pinto, who was a big fan of Michael Pollan. Michael Pollan was an early pioneer of the 'farm to table' movement and a big supporter of 'clean' and healthy food. These experiences have prepared Scott for Vitality, as he wants to show people that 'fast food' does not have to destroy peoples' health, but rather can help to sustain a healthy lifestyle.
Risks and challenges
The initial challenge out of the gate will be the notorious Boone winters, which are traditionally a hard experience for most local businesses. Our intention is to conduct a strong marketing initiative to counter this phenomena. We will put out ads in local-regional newspapers, magazines, and other form of media, as well as conduct interviews and gain coverage in journalistic expose's. Vitality will use internet and smartphone social media tools, and will work to develop new means for doing business in a tech savvy world.Learn about accountability on Kickstarter
