Island Bread Company is "raising" a brick oven!
Island Bread Company is a micro-bakery on Washington Island, Wisconsin, where we create rustic, crusty breads and pastries using certified organic grains and local ingredients whenever possible. We create small batches of high quality goods using traditional methods.
Island Bread Company is building a wood fired brick oven. We enjoy an ever-expanding group of customers, and our current production facilities do not allow us to meet the demand. This larger, more efficient oven will give us the capacity to produce as many loaves as the people desire. The oven will be built at the site of the former Clover Farm Store, once a grocery store. This site is now home to The Red Cup, a destination as well as a comfortable gathering spot for locals and tourists alike. The oven will add another dimension to the gathering spot. We’ll use it for community meals and classes, and offer home bakers the opportunity to use it as well.
A wood-fired brick oven is the heart of an artisan bakery. With it, we create rustic, crusty breads and pastries using certified organic Washington Island wheat, and local and organic grains and ingredients wherever possible. We are artisans in the sense that we produce small batches of high quality goods using traditional methods. All whole grains are organic and ground fresh within 2 days of baking. Some of our breads and croissants take three days to complete. Using a natural leavening process instead of commercially produced yeast gives our breads a crisper crust and moister crumb, which allows the breads to keep longer without the use of artificial preservatives. The natural levain allows the dough to rise slowly at low temperatures and helps break down the indigestible parts of the grain. This process allows our bodies to get maximum nutrition as well as the full flavor from the whole grains. Then, to complete the process, breads are loaded into the brick oven and baked to their full perfection. The brick oven uses local and sustainably harvested wood for fuel, and once fired can bake over 500 loaves, making it a very efficient use of fuel. The oven combines the forces of conduction, convection, and radiation, and bread placed inside quickly develops a crispy crust, which then assures a moist chewy interior crumb.
Coming together around a table or oven, for feasting, baking, and good company, feeds the soul of the community. Producing food that nourishes both body and soul is important, as is making and facilitating connections with people around the table. Using local ingredients and developing nurturing relationships with producers supports a sustainable community; it’s as much about preserving a traditional way of doing something as it is about making great bread. What and how we eat are crucial to the quality of our lives.
Most of our breads are delivered and shared throughout Door County, Wisconsin which, because of its being a tourism destination, allows us to reach people from all over the world, people like you who care about the place their food comes from and the quality of the lives of the people who produce it. But, we do send bread all over the country as well.
