Why a whole book about Banh Mi?
Not only does the Vietnamese sandwich, Banh Mi, represent a culinary ingenuity of fusion food - the combination of Vietnamese and French cooking techniques, it also appeals to the North American fast food culture.
I plan on learning how to make and prepare each component of this delectable sandwich with local street vendors, home bakeries, families, restaurants and chefs and culinary schools. I will be tracing the ingredients used back to home gardens, local markets, farms or wherever the trail leads me. Each area will have their own versions of the banh mi, as well as different stories, twists on food, and people to get to know.
My narrow focus of understanding and documenting an everyday, staple, poor person's meal is indeed odd to comprehend to those used to Banh Mi as exactly that. Banh Mi has become wildly accepted all over the world in recent years (New York, California, New Orleans, Sydney, Melbourne, and London to name a few) and gaining more and more mainstream attention. I hope to share with you the joy, excitement and satisfaction that I feel when making or eating Banh Mi through this book.
Ultimately, sharing my discoveries and understanding of a country through it's street food is the angle that I hope to master with my Quest of Yummy photo recipe story series.
