  • We are ready for any size order small orders will be built in house medium and large orders will be handled by our contract manufactures. All orders are hand built here in the USA

Dry & or rubbery meat is a real problem

Perhaps you have suffered from "dry poultry syndrome." Its an all too common occurrence. You might have experienced it before at a Thanksgiving dinner. You take your first bite of that turkey made with the best intentions, but it instantly drys your mouth as if you packed it full of cotton balls. You fight to choke it down but it stays in your mouth like a pile of old sawdust. You panic. Your life flashes before your eyes you would cry, except the turkey soaked up all your tears too. Finally you involuntarily dry heave. Sending sawdust turkey everywhere. You embarrassingly smile and pretend it was delicious to save the cook from embarrassment. No amount of gravy can save that turkey. Poultry is difficult to cook even for experienced cooks. From the Laboratory to the Kitchen 

How did we get this wild idea to transform the technology of a biological laboratory instrument into a kitchen appliance? It centered around a Thanksgiving turkey brining conversation I had with my wife Kara in the fall of 2003. She asked why the turkey had to sit in brine for so long, it took too much precious room in our refrigerator. I said we are waiting 12 hours for the brine to come to osmotic equilibrium between the cell contents and the brine. In short we are waiting for the salt to slowly leak past the cell membranes. I knew from my college electrical engineering project (biological impulse generator) we could use an electroporation technique to open the membranes instantly so osmotic equilibrium could come quickly in minutes rather than hours. The light bulb came on! Lets build a home use electroporator for cooking! And thus our journey began.

Our initial design was like most laboratory electroporators; it used large, dangerous, expensive, high voltage storage capacitors to store an electric field that would be discharged into the cells.  We found it was impractical for home use. The components barely fit in a 19" X 6" rack. It also required an arbitrary pulse generator for input control.  What it did provide is the ideal test platform to optimize pulse parameters for meat. We discovered we could design the Flavorkey™ CP to be lighter, smaller & more efficient if we stored the energy in a magnetic field rather than an electric field. After several iterations over several years we decreased part count & increased performance. We came to our current production design. Our next step was to purchase and optimize the expensive injection mold tooling for the plastic parts. We spent all our money on the important things to make the product ready for production.

Our switch from capacitance to inductance made our unit portable it was a major improvement but the unit was still clunky, the forks were hard to clean and the unit was industrial and unattractive.

The next step in the evolution of the Flavorkey™ CP was to industrial design it for mass production. The goals were to make the Flavorkey™ CP  look as good as it performs. We wanted a design that was easy to use, easy to clean, easy to store, easy to assemble and easy to own. We enlisted the help of Mike and Dave from Genesis Concept and design to help us with the challenge. It  took several design iterations and several prototypes to get it right.

Flavorkey Advantage and the Importance of Texture on Taste  

What we casually think and say about "taste" is actually a combination of sensory experiences; the true sense of taste (sweet, sour, salty, bitter, umami) also includes the sense of smell & touch (texture). It turns out that the texture of our food plays a huge role in our perception of whether a food is good or not. Simply dousing a flavorful aromatic sauce on a tough dry piece of meat does not transform it into good food. Physiologically dry meat tends to trigger our natural gag reflex. You are consciously aware that the dry meat you are consuming is not harmful but your body begs to differ. This may have given us the no so popular colloquial phrase "choking down your food." This experience is unpleasant and unnecessary you can now have tender juicy meat quickly and conveniently with the Flavorkey™ CP. The Flavorkey™ brining method will quickly allow the salt ions to naturally unwind the proteins, creating more protein surface area, thus allowing the meat to hold more of the precious flavorful juices. During cooking less moisture is lost to evaporation, resulting in a 20% more juicy, tender and flavorful meat.

Risks and challenges

All Projects have challenges but we believe we have a very good control over our vendors & supply chain. We have alternates and backups to everything from individual electronic components to entire vendors.

Our team has a lot of manufacturing experience including; commercial water equipment, electronics & small electromechanical appliances. We understand the realistic time to bring a product to market. The great news for you is most of the delays a project may face are behind us. We are ready to manufacture now. The largest challenge we face is production delays related to volume manufacture. We are well equipped to get fast turnaround for small volumes. we can hand assemble and produce 200+ units a month in house. We can produce 1000+ a month with contract manufacturing of electronic parts assembly's. The total time from order to shipping should be about 2 to 3 months. For larger orders we can get a jump start on production by leveraging the Kickstarter pre-orders to get short term loan to bridge the gap before the campaign deadline. No matter what obstacles come our way our team has the talent and the persistence to fix it.

You the supporters are the most important part of our project, you're the reason we carefully developed the Flavorkey™ CP over ten years. Special care is taken at each step so we can ensure the delivery of the best product possible. We will be transparent and open through each step in the process. We will update supporters on the progress of the project with reports on manufacturing through kickstarter.com.

We believe we have lowed the risk to nearly zero.The risk question its not if the Flavorkey is produced. the only question is when you will take delivery and the risk is related to order volume. The smaller the order volume the faster the delivery. We have proven we can manufacture and deliver the Flavorkey™ CP now it's time to get yours.
