WHAT IS TAPROOT?
root | roōt; roŏt |,n. the part of the plant that attaches it to the ground or to a support, typically underground, conveying water and nourishment to the rest of the plant via numerous branches and fibers : cacti have deep and spreading roots | a tree root.
taproot |ˈtapˌroōt; -ˌroŏt |, n. a straight tapering root growing vertically downward and forming the center from which subsidiary rootlets spring: the persistent underground part of a plant, esp. when fleshy and enlarged and used as a vegetable, e.g., a turnip or carrot.
Taproot Lounge and Cafe |ˈtapˌroōt; -ˌroŏt lounj and kaˈfā; kə|, n. Juice bar and public house located in an 1800's historic building in downtown Salem, Oregon. Set to open in Spring of 2014. Cafe's main focus is the juice bar featuring fresh vegetable and fruit juice. Offers breakfast sandwiches, light and healthy meals, as well as coffees and teas. Cafe transitions into a lounge with a focus on craft cocktails and craft beer. Goals include: supporting local farms, local businesses, providing an additional outlet for musicians and artists to perform and display talents.
Use of Funds
Your pledge will help fund necessary renovations and outfitting of the space. In addition to purchasing equipment, funding will help replace the walls, floor coverings, ceiling grid and countertops. The electrical needs updating; new lighting and HVAC system needs to be installed. We also plan on building new counter tops for the juice bar and main bar.

The Taproot Space
Our plans include exposing some of the brick and wood flooring to bring back the original charm of the building. We will also be knocking down walls and rebuilding bar tops. We want our space to be welcoming, comfortable and influenced by artists.
Taproot will offer roughly 45 seats of various types, appealing to patrons who prefer a bit of privacy as well as those who wish to mingle. You can find seating at the juice bar counter, the main bar, at a window seat or in a booth.
Who We Are
Taproot Lounge and Cafe is a DBA owned by Under One Tree, LLC and managed by Christopher Holland. Christopher holds a Bachelor's Degree in Business from Oregon State and has been in the customer service industry for over 12 years. He has been a certified trainer and lead bartender in a fast paced, high volume national restaurant for the last nine years. His experience is an important asset that will carry over into this new venture.
Christopher quickly stepped into a leadership role as a bartender and bar trainer at the Ram Restaurant & Brewery and shortly thereafter, created the award winning drink “Utophia” in August of 2010. The drink is one of the top selling drinks at the Salem location and still featured at all Ram Restaurants & Breweries nationwide.
In 2012, Christopher was the winner of a nationwide bar tending photo contest held by Fireball Whisky and was named the Ultimate Dragon Slayer. Christopher’s most recent accomplishment is his involvement as a contestant in the live version of "Salem Sharks" as a local entrepreneur.

Risks and challenges
We understand starting a new venture such as this comes with many risks and challenges. From setting up vendor agreements, working through various health, building and permit delays, unforeseen expenses and underfunding. We know that these things can all happen. However, we are committed to fully utilizing the resources you have shared with us. We have already begun to reduce our risks by talking with architects, contractors, and vendors to get a better understanding of the challenges that may arise. You can trust that we will thoughtfully use the funds you have pledged. We promise as we grow we will not skimp on quality, customer service, or our commitment to the community.
