Inspired by my passion for great pizza, I created Forno Moto in 2010, introducing pizza napoletana to the Triad via its backyards, vineyards, festivals, and streets. Along the way, Forno Moto has garnered acclaim from clients, customers, and press alike, and was named Best Food Truck in Winston-Salem.
A tradition born in Naples, Italy centuries ago, pizza napoletana is simply a great piece of bread topped with high quality ingredients, baked in a wood-burning oven at very high temperature. The result is remarkable; what pizza is meant to be. Forno Moto's success reinforces my founding belief that Winston-Salem wants better pizza; needs better pizza.
After 2+ years of taking the pizza to the people, I am very excited to announce that we are well into construction in the heart of downtown on Trade Street. It's an exciting opportunity to add a new layer to the fabric of Trade Street, and join the eclectic cast of characters and businesses that make Trade Street the primary downtown destination.
The restaurant will be convivial, exciting, fun, cool. It will embrace the ethos of great italian food here in North Carolina; honest, simple, local, seasonal, handmade.
The space will feature a bustling, open kitchen, the heart of which is a fire-breathing beast of an oven. It's the Ferrari of pizza ovens; made from bricks forged of the volcanic soil surrounding Mt. Vesuvius, and engineered to retain the intense 1000 degree heat necessary to produce a beautiful pizza napoletana. Handmade in Naples, Italy by a 3rd generation craftsman, it will be the only one of its kind in NC. As the center of the restaurant, it will provide the energy and warmth that will personify the space. This is the best pizza oven in the world.
Your participation will go toward the purchase and installation of this working piece of art. A great oven is necessary to our goal of producing great pizza. By participating, you will have a hand in each and every pizza that emerges from it for years to come.
This restaurant represents years of planning and dedication. Throughout this journey, the most rewarding and inspiring element has been the tremendous support I've received from family and friends, clients and customers, even complete strangers. Such remarkable support and encouragement from so many inspired me to offer the opportunity to share in bringing something both time-honored and innovative to Winston-Salem. Risks and challenges
The primary concern we face is the timing of getting open, and therefore the timing of fulfilling your reward. The building we occupy requires significant upfit and construction, and we are somewhat dependent on that work before completing our space. However, construction is well underway, with waste and water lines, framing, and HVAC among the items completed.
Construction projects typically take on a life of their own--dealing with plan review and the health department requires working according to someone else's schedule, for instance--, and a wrinkle or two is to be expected. However, we are doing everything in our power to get permitted and open as soon as possible; coordinating design, construction, equipment selection and installation to maximize efficiency.
If we do experience a setback that would delay the fulfillment of rewards, we will immediately express the details to all pledges, and offer to work out alternatives if desired.Learn about accountability on Kickstarter
