Marie Porter takes a smart, scientific, and creative approach to creating ridiculously delicious gluten-free recipes.

How many times have you come across a gluten-free recipe claiming to be "just as good as the normal version!", only to find that the author must have had some skewed memories on what the "normal" version tasted, looked, and/or felt like?

How many times have you felt the need to settle for food with weird after-taste, gummy consistency, or cardboard-like texture, convinced that this is your new lot in life?

Most gluten-free recipes are developed by taking a "normal" recipe, and attempting to come up with the perfect balance of alternative flours to substitute for the full gluten flour in that original recipe.

I take a bit of a different approach: developing the recipe from scratch, throwing the original methods out the window. Rather than just swapping out the flours, I also look at utilizing other supporting ingredients and different techniques to achieve the perfect end goal ... not just a "reasonable facsimile".

Think about it:

... Light, airy cakes that do not taste like bean flour - A simple change in technique makes ALL the difference!

... Fresh pasta! Yes, you can have ravioli again... Flavourful, delicious Gyoza as well!

... Homemade "Chinese takeout" that is much better than the original.

... Deep dish pizza that is crispy on the outside and tender inside... like pizza is SUPPOSED to be!

... Chewy, delicious cookies that *everyone* will want to eat!

... Never having to present a dish with an apology for it being Gluten-Free.

... Indulging some of your deepest, darkest guilty pleasure cravings... safely and joyously!

Make no mistake - this will NOT be a healthy cookbook. You will find yourself gorging on foods that you thought would never cross your lips again. You'll probably gain some weight, and you'll definitely need to learn how to defend your gluten-free food from invasion by your non-GF friends and family. (Well, or make enough for everyone!)

What it will be is fun, and the recipes will be easy to cook/bake.

Developing a whole book full of recipes that are safe *and* ridiculously tasty is an expensive, tedious endeavor, but I'm willing to take on that commitment!

The MOST common question we are asked is "When are you going to do a gluten-free cookbook?".  Now's the time for you to get on board as we succumb to (positive!) peer pressure!

 Beyond Flour: A Fresh Approach to Gluten-Free Cooking & Baking will include at least 75 recipes, and feature many full colour photos.  Measurements are provided in both US and metric units.

If funded, we are aiming for a release date in early October, 2014.

STRETCH GOALS!

Looks like the time has come to announce some stretch goals!   

When I budgeted for this project, I made sure that the original goal of $10,000 was enough to develop and print the book, fulfill backer rewards, and account for all of the processing fees. 

I am so thrilled with the response to the book - it tells me that there REALLY is a market for this.   As we fund over the initial level,  I can embark on a modest publicity campaign for the book - this was a "nicety", and as such, was not budgeted for in the initial goal.   Expenses involved would include such things as media kit development and printing, review copies of books, postage, press contact subscription fees, etc

If we reach $5,000 in additional funding, we can put together a reasonable PR campaign, focusing on mainstream print, tv, and radio media.

Of course, reaching a stretch goal is more fun when EVERYONE benefits, so if we reach $5000 in additional funding ($15,000 overall), I will commit to developing 25 additional recipes for inclusion in Beyond Flour!   I already have some cool ideas about the kinds of recipes I'll develop... :)

Risks and challenges Learn about accountability on Kickstarter

As a seasoned recipe developer/author/publisher, most potential risks are things that I've worked out, long ago.

Many of the base recipes for this book have already been perfected. That ravioli I promised earlier? It's delicious! I have a great track record for developing gluten free recipes.

I have a photographer, publisher, and distribution in place already, along with my 8 other titles. This is a well oiled machine, at this point!

  • You know, I'd honestly never really considered it... but we've had enough questions about it to look into it. I'm about 80% sure we'll be adding an ebook reward level in the next few days, just need to crunch some numbers first!

  • I've had a few questions about how the card charging works, etc, so let me address that all here.

    Basically, you're pledging whatever amount you want, towards the final goal of fully funding my cookbook project. Unlike some other crowd funding sites (which all work differently!), Kickstarter is "all or nothing". If we don't reach 10,000 in pledges by the end date of the campaign, the project doesn't fund, and the book doesn't get created.

    Because of this "all or nothing" model, Kickstarter doesn't charge your card until the campaign ends, and ONLY if it's successful in reaching the funding goal. Your card won't be charged (Aside from possibly a $1 authorization charge, which drops off a few days later) until around December 13th!

    So, if you are considering waiting for payday, feel free to go ahead and enter your pledge at any point. Then, you'll be "in" for any of the backer-exclusive posts that I'll make between now and the end of the campaign... and I'm working on some great exclusive recipes to post for backers!

  • Short version: No.

    Each of these recipes are going to be designed as standalone recipes. I'm not a fan of using a catch-all "all purpose" flour, as it limits flexibility.

    I try to avoid xanthan gum unless absolutely necessary, so it definitely won't be in everything.

    There will be bean flour (and rice flour, etc) in the book, but - as with all ingredients - only when it's the right one for that particular recipe.

    Finally, while it's definitely not a "vegetarian book", I wouldn't say there's going to be a huge focus on meat, and probably not in any way that wouldn't allow for vegetarians to swap the meat out of the dishes that call for it.
