It's the people who make the place. It's something a combined 35 years' worth of experience in the hospitality industry has taught us. The goal has always been fairly simple: create a great place in the city for great people to gather in. So this is what we've set out to do.
But who is we? We are a group of friends with personal backgrounds spanning across the Netherlands, West Yorkshire, Wales and the Midlands.
We are Lau and Catherine Wensink, Scott Atchison, Joe Hague, Will Chambers and Cory Chadwick, and we've found our home in Nottingham.
More specifically, we've found our home at 31 Goose Gate, Hockley, Nottingham.
We love Nottingham. There's something about this city which has managed to keep us here long after jobs have run their course or degrees have been completed. But we can't help feel like there is something the city's nightlife is crying out for, so we've taken it upon ourselves to provide it.
We've boiled our vision down to this: great drinks, great food, great music at a clear and fair price in an environment which forever stays on the comfortable side of cool.
Our experience in the industry has introduced us to all manner of great and garbage drinks, and we know which ones we like. Put simply: we like a good drink, so we've put together a drinks selection which we feel brings together the best of everything.
We're beer drinkers at heart, so expect to find a quality draught-beer line-up. We're firm believers in keeping things real, so we want to introduce the city's first round-pound pump price. Three keg beers at three price points: £3, £4 and £5 per pint. We'll also have a real ale to boot which will never budge from £3.50 a pint - regardless of what's in the line. It's clean, and pretty palatable - just like our beer.
That doesn't mean you won't find just as strong an offering on our wine and cocktail lists. We've curated a wine-list with the help of an expert to offer a quality option for everyone. House wine by the glass at £3, £4 and £5 (see the theme developing?) as well as an extended wine list which will, quite literally, be as tall as the building.
Our cocktail list will be a mix of classic and contemporary options, all created with love by yours truly. We know a good cocktail when we see one, so your Espresso Martini is safe with us.
We feel our food offering is inspired - somewhat ironic considering it was actually inspired by meatball restaurants in New York City. We've taken the best of what Manhattan had to offer and upgraded it to form the basis of our own, unique menu.
Our food will be seasonal, ever-changing and at least half will always be vegan-friendly. Whether it's Pork Meatballs with Spinach and Rigatoni in an Arrabiata Sauce or Baked Falafel with a Mixed Leaf Salad and Quinoa with a Tzatsiki Sauce, we're making sure we've got something for everyone.
We've found ourselves a home in a place which belonged to TS Kaye and Sons Toolmakers and Merchants at 31 Goose Gate. We'll exploit it's wide open space and original brickwork to enforce a feeling of grandeur in a building which deserves it. Our look, our theme, our vibe, our whatever-you-want-call-it will focus on placing stunning modern fittings into a beautiful, rustic space.
In our first visit to the property, we fell in love. In our second visit to the property we noticed something extra-special: an original stained-glass window which proudly displayed "31 KAYES".
A few meetings later, and we had our name: a NYC-inspired, modern take on the original.
Welcome to 31K.
Risks and challenges
We've each invested heavily in this project, and we're putting our vision on the line.
There are no third-party backers, no corporate companies and (unfortunately) no bottomless pits of cash to dip into. We are simply five friends who believe in what we are doing and have scraped together the resources to do so.
We've challenged ourselves to build a bar from scratch and turn a derelict building into a fully-functioning city-centre venue in 6 weeks. Not only that, we want our fully-functioning city-centre venue to go head-to-head with the best of what Nottingham already has to offer.
We've already invested personal savings to turn our dream into a reality, and we're not asking for your money to help us build it. We're asking for you to invest in our dream to help us take 31K to another level.
