Gross Confection Bar will be a dessert-focused restaurant and bar to be located in the heart of the Old Port district in Portland, Maine. Gross will provide a unique and consistent restaurant experience featuring an ever changing selection of high-quality artfully-plated desserts, cocktails, dessert wines, digestifs, and exceptional service. Gross will also provide a consistent selection of enrobed ganaches, fruit pates, bon-bon, entremets, late night savory snacks and desserts to go. Gross will create a new niche for a "just for dessert" destination experience in Portland.
Portland’s Old Port has long been a Mecca for award-winning, fine dining establishments. Recent investments in the area by major hotel chains provide further evidence that Portland, and its renowned dining scene, are still growing in popularity as tourist destinations. Flanking the Old Port are the Cross Insurance Arena, Merrill Auditorium, and the Maine State Pier - all of which host many concerts and events throughout the year. It is also near the Ocean Gateway Terminal which welcomes almost 90,000 cruise ship passengers annually to shop and dine in downtown Portland. Gross Confection Bar is projected to be a 40-seat restaurant - 30 table seats and 10 bar seats – that will take advantage of the high consumer traffic in this busy tourist area. Gross’s primary goal will be to attract and maintain a loyal clientele of local residents and visitors which will provide steady base revenue to support the business during the seasonal fluctuations inherent in Maine’s tourist industry.
Guest pastry chef nights will also be employed to create buzz, entice new customers, and provide unique experiences for diners. These events will be creatively marketed to promote a sold-out evening with nationally acclaimed pastry chefs taking a turn at running the kitchen for the evening and providing an exclusive experience for patrons. Educational pastry/dessert cooking classes, for beginners and professionals alike, will be offered in future phases. The dessert bar concept is quickly becoming a national market trend. Given the exceptional experience of its team, Gross has the potential to nab the first-to-market spot for such an establishment in Greater Portland and grow quickly and significantly.
The monies earned from this Kickstarter project will go not only to necessary refrigeration units, but also to local craftsmen for the build-out of the restaurant.
Risks and challenges
As with any new restaurant there are inherent risks. We will run into bumps and challenges along the way, its part of the charm of a running a restaurant. With over thirty years of restaurant experience behind me, I have not only experienced these challenges but conquered them as well.
What all backers of Gross Confection Bar should be aware of is that this project has been my passion for the past three years and I'm determined to create an experience that one won't soon forget.
