Copper Kettle Bakery sells delicious hand-made Welsh Cakes through local farmers markets, farm stands, and high end food stores in Massachusetts (including The High Street Market, Volante Farms, Allandale Farm, Foodies and Brothers Marketplace) as well as online. Help us share our family’s premium Welsh Cakes with foodies and dessert lovers across the US!
With this Kickstarter campaign, Copper Kettle Bakery will expand its operation by hiring a Part Time baker and Part Time farmer’s market manager. This will enable us to bring more Welsh Cakes and Welsh Cake mixes to a broader consumer base.
- Part Time Baker - with an additional team member we can increase our Welsh Cake output by more than double. This position would also be trained in giving in store demos of the Welsh Cake mix and be available for in-store and market samplings.
- Part Time Farmers Market Manager - with the addition of this position, we can manage and attend more farmers markets without impacting other operations. The position would help hire, train and manage the seasonal staff at all the farmers markets. They would also provide coverage at select farmer's markets.
WHO AM I?
I grew up in South Wales, UK, where early morning weekends were spent in the kitchen. My mum Eileen and grandmother Irene were kneading dough and warming the griddle for our morning Welsh Cakes. I loved to help them cut the circles of dough. Even today, the smell of allspice and cinnamon takes me back to the warmth of that kitchen filled with love.
My mother used to take me to a café in our village that served tea, Welsh Cakes, and sweet breads. They filled every teapot with boiling water straight out of their copper kettle. I told my mum as a child: “One day, I am going to open a bakery and call it the Copper Kettle.”
After my mum passed away in June of 2013, I found myself craving the taste of Welsh Cakes. I began baking them for family, neighbors and friends. As the requests grew, I realized that I had found my calling. I love to share the tastes of my childhood with friends in my new home in Massachusetts. In the fall of 2013, I made it official, opening Copper Kettle Bakery.
ABOUT COPPER KETTLE BAKERY
Copper Kettle Bakery has successfully introduced light and flavorful fresh Welsh Cakes to the Northeast United States. Created in Wales, Welsh Cakes are a hybrid of a scone, a biscuit and a pancake. Griddled, not baked, Welsh Cakes have a unique taste and texture quite unlike any other baked good.
Current flavors include the traditional Currant as well as Cranberry and Chocolate Chip. Welsh Cakes are the flagship product of Copper Kettle Bakery. Several seasonal flavors will be reintroduced throughout the year once the company has scaled its operations to meet growing demand.
WHY WELSH CAKES?
Because they are traditionally griddled on a bakestone, an electric griddle or frying pan, the inside of the Welsh Cakes has a soft, less crumbly texture while the outside is like a pancake studded with fruits or chocolate. Our fresh Welsh Cakes have a 5-7 day shelf life, and they are also PERFECT out of the freezer. Welsh Cakes taste great all by themselves but also taste delicious topped with butter, jam, honey or your favorite topping. We enjoy them with wine and cheese too. They make perfect gifts, lunch box treats, and they are a really nice alternative to cookies.
Our Welsh Cake mixes allow you to griddle twice as many Welsh Cakes at home. If you like the thought of having your kitchen always smell like the holidays and you like scones and cookies, you will love Welsh Cakes!
A POSITIVE PROBLEM
Our bakery started in our licensed home kitchen in 2013. In order to meet the growing demand from specialty food retailers and select supermarkets, we have since added to our production capacity by joining a bakery incubator space. In addition, we recently launched our artfully packaged and branded Welsh Cake Mixes which are available to existing retailers and new distributors in New England. The product mix adds an additional revenue stream and, given the inherent longer product shelf life, expands our geographic reach while introducing more people to Copper Kettle Bakery and our delicious Welsh Cakes.

Risks and challenges
Copper Kettle Bakery is up and running and has been for a little over a year and a half. In order to continue, to be able to grow and to become sustainable, we need to add people to build our capacity and distribution.
At this time, we are a company of 1 full time employee (the founder) and 2 contractors as well as a sales broker. Griddling is done in the middle of the night to allow the founder time to be able to package, sell and distribute product. (Sleep? What’s that?)
The risk at this time is scaling operations while maintaining our quality and existing customer relationships.
The biggest challenge around this is the upfront cost to hire people as well as train and set up our staff for success.
We believe that, given a chance, people across the country will love our delicious Welsh Cakes. But we don’t want to have to sacrifice quality in order to expand.
Looking back to the beginning in 2013 we left the year behind with 1 wholesale account. By the end of 2014 we had a total of 6 wholesale accounts and this year so far we have added 2 new accounts with 5 more stores.
