Karen is a classically trained chef, certified nutritionist, passionate fermenter, and founder of Kraut Source. For months, she worked obsessively on perfecting the recipe for Lemonayo because she wanted to create a culture-rich condiment that will make any dish more delectable and healthy.
Lemonayo is yummy, pairs with almost everything, and is really really GOOD for you. Yeah! It is way beyond just a spread. It is a nutrient-dense condiment that is also a symbol of community, sustainability, and our relationship with live-cultures (probiotics) that maintain good gut health.
Why is Lemonayo a Nutrient-Dense Condiment?
- It is fermented for a month to ensure development of probiotics.
- It is made with whole lemons, including the peel and pith, which is where most of the vitamin C and polyphenols reside.
- It is made with extra-virgin olive oil that provides omegas-3, 6, and 9.

Why did Karen create Lemonayo?
Slow and Hand-Made in Small Batches
Making Lemonayo is a slow and careful process. In order to properly preserve the whole lemons, onions, and garlic, and to allow development of its unique, rich flavors, we must be patient and allow a batch to ferment for an entire month. Then we process each batch by hand and add in our special blend of spices, extra-virgin olive oil, and sesame paste. We taste test every batch and hand pack every jar ourselves.

We cut, squeeze, ferment, blend, and bottle at KitchenTown, a co-op commercial kitchen space that supports independent food-makers, offers mentorship to startups, and provides classes to the community.

What will we do with the Kickstarter funds?
A successful campaign will allow us to purchase high-quality equipment that will not compromise our dedication to quality. And we will pack Lemonayo in glass jars in keeping with commitment to sustainability.

This is Karen's second time on Kickstarter. She launched the successful Kraut Source campaign in 2014 and has been in the business and passion of fermentation ever since. Both Kraut Source and Lemonayo are projects of Cultured Gourmet LLC, which is a small company based in San Francisco. Its mission is to bring the goodness of fermentation to everyone, while also supporting efforts of entities that strive to make our planet a better place, such as the Pachamama Alliance.

Risks and challenges
I've been a chef for years, cooking in 5-star restaurants, and also being a culinary instructor. But I have never produced a food product for the marketplace. Although we have perfected our recipe, stepping into large-scale production while maintaining a high-quality product that is made by hand will be a learning curve that we are excited to take on. It is our intention to be completely transparent in our journey and share the challenges, triumphs, and comic moments too! : )
