The Roost: a warm and hospitable place where groups and individuals gather, settle in and belong.

The Roost is named after our family farm in western Kansas that was timber claimed by my GG Grandfather Frank Kinter in 1873, and is inspired by strong Kansas work ethic and determination.
Offering three of the most important elements any successful restaurant and business must have:
- A welcoming, warm and clean environment
- Friendly, knowledgeable and reliable service
- Delicious food and beverages made with extra attention to detail
This will be our first business endeavor. With the many years of experience we have behind us and the never ending drive to have a place of our own, we are determined to achieve our goal and prove our abilities. We hold food and hospitality in high respect. It is something we consider basic to human nature. It is an essential building block of family, friendship, and culture. Creating food and inviting the community in to share our space and product with is not a task we take lightly.
The Roost, upon completion, will be a coffee shop, bakery, breakfast and lunch restaurant with a full bar and rentable venue located in historic Downtown Lawrence. The hours of this establishment will be from 7:00 am – 4:00 pm Monday through Sunday.
The Coffee shop:
Founder Manda Jolly will manage the floor and coffee shop of The Roost. The coffee and espresso for The Roost will be supplied by Broadway Coffee out of Kansas City and New Mission Coffee from Lawrence. It will provide high quality coffee classics and favorites. Staunch coffee drinkers and beginners alike will be able to come downtown and find something to suit their needs.
The bakery of The Roost will produce mouthwatering pastries such as scones, cinnamon rolls, graham crackers, marshmallows, cookies, sweet and savory pies, cakes, bread pudding and turnovers all made fresh. An added feature of the bakery is that products can be pre-ordered and taken off site for business meetings and parties. Our pastry chef has the ability to alter several recipes to vegan and gluten-free upon request from the customer.
The menu for The Roost is unbeatable. Co-founder Sean Jolly and his kitchen crew will offer classics such as biscuits-n-gravy, succulent brandy spiced French toast, several Eggs Benedict options, potato pancakes, bread bowls of soup from scratch, roast beef and garlic spinach hoagie, fried chicken and an assortment of salads.
The bar at The Roost will be managed by co-founder Ken Pingleton. The cocktail list he has planned for The Roost is outstanding and unique. It will include spirits and elixirs infused with local produce as well as homemade pickles and garnishes. There is a bloody Mary menu and a carefully planned list of libations that compliment our cuisine.
The atmosphere of The Roost will be warm and inviting. The interior is inspired by old hardware stores and grocers. Behind the bar will be a towering wall of shelves with nooks and crannies for all barista and bartending tools. A rolling library ladder will help keep everything in reach. The soothing smell of coffee will grab you upon entering the space and service will be nothing short of exceptional.
Manda, Sean, and Ken have found a group of individuals that support their ideas and believe in their vision. Therefore, capital has already been set aside in personal and private money to invest into The Roost.
The additional 20k that we are seeking through Kickstarter will cover the cost of bringing the current ventilation system at 920 Massachusetts Street up to code. This portion of the renovation project has reached such a considerable cost because we are combining what used to be two separate and inefficient kitchens into one accomplished kitchen and bakery. This will allow a new seating area towards the back of the restaurant, extended bar seating and a new storage room. This part of the renovations is the most significant part of the entire project. It allows The Roost to reach its full potential and utilize 920 Massachusetts in the way it was intended.

Risks and challenges
Opening a new business is always a huge risk to take. Statistically 52% of new businesses fail within their first five years. However, when you open your business for the right reasons the risk of failure is greatly reduced. We love the restaurant and hospitality industry, and it is what we do best. We have a track record of managing several successful endeavors. We have the passion to deliver and succeed. We have done our research in order to plan accordingly, and we have something that some would consider the most important aspect to success: location, location, location.
The Roost has the fortunate circumstance of inheriting a space on Massachusetts Street that was home to a successful breakfast establishment for over 15 years. More than one Founder of The Roost derives from that organization's original family and one spent 11 years there getting to know the downtown Lawrence community, learning the flow of business and about the challenges that come with owning and operating a restaurant.
Once our renovation project is successfully funded on Kickstarter we will we have the capital needed to finish up and get our doors open to public. Once we are open we will be able to fulfill all of our incentives that we have committed to. So help us get open and then come visit and cash in on what we have promised you.
