

Artisan Kimchi & Steamed buns
Creating either kimchi or handmade steamed buns individually are incredibly labor intensive; doing both has become my life. Kimchi takes 4 days before it can be even called kimchi and another week to be ready because it fermentation is a a long process. Steamed buns take 8 hours to make because they need a lot of time and love to be coerced into light, puffy delights. We never take short cuts; patience and excellence make up the bedrock of Simply Seoul Kitchen.
We now have a very exciting opportunity to move into a small retail space in a highly anticipated Midtown development. This means steamed buns can be made available all day, every day. In order to support this volume, we have to have our own facility. Our current shared kitchen cannot provide the space we need to be in a brick and mortar.
This new space will also allow Simply Seoul Kimchi to be distributed into other states. Our goal is to move up the Atlantic and share our amazing kimchi with the east coast!
The money we raise will go 100% toward our new kitchen. This includes, the building lease, tables, refrigerators, equipment and licensing.
Risks and challenges
Thankfully, this project has a very low risk factor. My product already has distribution and a following.
The biggest challenge will be getting the kitchen to code and licensed by the county-state. Anyone in the food industry knows that inspections are difficult and stressful. The advantage we have is that the kitchen we are moving into was recently vacated by another licensed business that outgrew the space. So the space is still licensed and current.
If the kitchen takes longer than expected, I still have my current kitchen to continue production in. So, there is not any possibility of the project going south.
