1,444 minutes, 86,400 seconds, £50,000… Pinion Potentially?
A year after you all helped us open Wreckfish, we’re back again, this time in Prescot... Introducing Pinion.
We’re looking to open a 55 cover bistro in Prescot, Merseyside. We already have the site and most of the team and just need £50k to get it up and running.
As with all of our restaurants, Pinion will serve really lovely bistro food cooked up from scratch, in a comfortable and humble environment.
So, why Prescot?
You may have heard us talk about our seriously amazing landlords at Wreckfish, Gav and Will. (They’re the ones that let us do the Wreckfish pop up even before we raised the money to open). Earlier this year, they let us know about another site they have in Prescot, an old Betfred. Prescot, like many town centres, is having to compete with retail parks that have popped up in the area and so it’s been left a bit quiet. However, not only are there some really great shops on the high street, it’s undergoing a regeneration with the possibility of Shakespeare North heading to town. After we went to take a look at the site and met some of the amazing people who live and work there, we knew we had to open.
What’s the rush?
No, we don’t just love the drama… because we already have the site and most of the team in place, having the money available as soon as possible just means that we can turn the project around quicker. We are also really keen to make it as simple and transparent as possible for you this time round. We’ve scrapped meal vouchers and instead you can pledge for the exact monetary equivalent, so £50 is £50 to spend in the restaurants. And with doing it in 24 hours, it will mean you’ll receive your vouchers and be able to use them even sooner… win, win no?
Pinion is the name for a mechanism in a watch and with Prescot’s big watch-making history, we thought it was really nice. It actually has a double meaning too because it’s also the outer part of a bird’s wings that get cut to prevent flight… deep.
Our landlords have already started work on the building, but we will need £125k to launch the restaurant. We just need you to help us raise that extra £50k to make Pinion happen… go onnnnn.
If all goes to plan, we’re hoping to open Pinion in July 2018. The 55 cover bistro will be similar to all of our other restaurants, with a relaxed and welcoming feel serving such dishes as Chicken liver pâté, apricot and cumin chutney, toasted brioche and Braised featherblade of beef, celeriac puree, parmesan and truffle chips .
The Elite Bistro’s timeline...
We opened Sticky Walnut in Hoole, Chester, in January 2011 on a budget that meant famously choosing between an all singing Rational Combi Oven or new tables and chairs. We went for the oven. It was the right decision.
Since opening, Sticky has been awarded Catey ‘Menu of the Year’, AA ‘Restaurant of the Year’, Cheshire Life ‘Restaurant of the Year’ and many more amazing accolades.
After a few very successful years, we decided to open a second bistro, Burnt Truffle in Heswall and thanks to some incredible Kickstarter supporters it opened in July 2015. The restaurant has been awarded an AA Rosette and received really lovely reviews from the likes of Lisa Markwell and Jay Rayner.
After Burnt Truffle, we then launched a third restaurant in 2016. Hispi opened its doors in Didsbury, South Manchester in September 2016. Hispi has also received lots of great reviews, two AA rosettes and many awards including Best Newcomer Restaurant of the Year at the Food & Travel Magazine 2017 Reader Awards and features in Restaurant Magazine’s Top 100 Restaurants in 2017 and 2018.
Last but not least, Wreckfish opened in October 2017 after a record-breaking Kickstarter campaign where all you lovely people made sure it was the most money ever raised for a UK restaurant on Kickstarter and third in the world! Wreckfish has been smashing it, already receiving a really great review in The Guardian.
Despite only being open six months, it has also been nominated for Best Newcomer Restaurant of the Year at the Food & Travel Magazine 2018 Reader Awards and features in Restaurant Magazine’s Top 100 Restaurants for 2018.

Risks and challenges
The risks are limited this time around thanks to the support of our landlords, however no project is without bumps in the road, with your support and our great team working hard we hope to keep challenges to a minimum.Learn about accountability on Kickstarter
