Preservation & co. was created because of a passion for cooking and old food preservation techniques. When we realized that we could turn this passion into a thriving business that could also benefit our community, we knew it was time to make our move.
We have been in business since 2010 in the Sacramento area, starting with our focus on jams and jellies. That division of our company was titled "Bar in a Jar" because we created all of our recipes based on cocktails. We have self funded all of the start up over the past couple years, including LLC fees, jars, produce, labels, farmers market supplies, state licensing, and health department certification, etc. Now we need help moving our company to the next step, and we need a commercial kitchen of our own to meet the demand of our growing customer base.

We have been working in the service industry for a combined 30 years and have seen 100s of products come and go over those years. By taking our training in customer service, listening to what our customers want, we feel that we have created a product that far surpasses the industry standard in food preservation. We pack every jar by hand to ensure that only the highest standard of produce will make it into our jars, and into your homes and your restaurants.
What makes our products taste so great?
We have always sourced our produce from local farms, and will always continue to do so. Although these products are shelf stable, starting with fresh produce will help us keep a very robust flavor in our jars. We use the "Hot Pack" Method of canning, which means we take fresh produce, pack it into jars, and then pour the hot brine over the produce. This process ensures optimal texture, but requires more time aging to reach its flavor potential. We then let the jars age for a minimum of one month in our warehouse before they ever make it out to market.
What are we going to do with the Kickstarter funding?
We are in the process of moving into our new production facility here in Midtown, Sacramento. While we do have our funding for the facility, we need your support to purchase the product we need to meet our new retail orders! We will need to purchase jars, labels, vinegar, spices, produce, and shipping packaging.

Risks and challenges
Risk #1 We are moving into a 3200 sq. foot facility. This is obviously taking a big risk just due to the financial investment. We are inviting 10 other companies to rent our kitchen on the off hours. This will help them grow to the level that we have been able to achieve, and will also help us soften the blow of the lease and utilities.
Challenge #1 We will need to place our products into new retailers to support the expense of the large space that we are leasing. Our goal is to have our jars into over 100 stores by the end of our first year in our new space. This will not only pay our bills, but will allow us to expand to other markets and states.
Challenge #2 Currently we operate with just the two of us working in between our shifts at local restaurants. When we open the doors to our new facility, we will have to hire new staff. These staff members will be working numerous shifts and will require extensive training.
We are confident that with all of the determination and support, we will succeed and will have a lasting impression on the specialty food industry!
