What's this all about?
After years of creating milk like - though dairy free free chocolates- suitable for those with Food Allergies, Vegans and other specialty markets - we at www.premiumchocolatiers.com have gotten used to hearing "When will you make small colored chocolate candies for snacking" This is our single greatest requested item and we are asked about it constantly. This should finally put the issue to rest in a yummy way! No No's are All Natural - No more fears of Red 40, and Yellow 5 in your candy! There is no Milk, Peanuts, Tree Nuts, Gluten or Eggs. They are small chocolate candies with a mini vegan marshmallow inside (replaces the peanut). Of course we use our famous signature Milkless chocolate coating so you can't tell the difference by look and taste. And they are sooo yummy...
And who are you?
I started the company five years ago after working in Product Development and Food Safety for food companies such as Heinz, Kellogg and Group Danone. I have an MS in Food Technology from Rutgers University and have always enjoyed dabbling in Food Product Development and trying new things.
This is a large capital expenditure - one that we cannot incur without support. You will be generously rewarded for your efforts. No doubt you will also be forever the pioneering force behind what so many considered impossible. Of course we need to get the full funding to receive any - so please keep that in mind. We really appreciate it.
What are you gonna do with my hard earned cash?
Our current infrastructure does not include the equipment needed to make these and we are very fearful of outsourcing these for a number of obvious reasons. These include cross contamination worries and other unknowns that we ran into during the prototype phase. We will buy the panning equipment and coat the Vegan Marshmallow with the chocolate and coloring right at our facility. Nothing enters here that doesn't conform to our strict requirements. We will also design and print the beautiful packaging to make this a reality.
There are also costs associated with learning and training on this new process. We have already run a full scale test at another facility and we have proven the concept and so it is very much possible and amazingly delicious. The idea is to begin producing and shipping these in the beginning of October so that no child is left behind when the Holiday season begins.

Do you have in mind to do a solid chocolate inside?
We've considered many options for an inside. We obviously couldn't use peanuts, we didn't find a good gluten free pretzel option to work, and solid chocolate would require an additional level of equipment. We therefore decided to start with a little marshmallow in middle (which we love by the way), and if this takes off we will consider more extensions. We are also considering a Peanot center!

Risks and challenges
Although we have been in the chocolate business for quite a while we have never made these types of candies just yet in house. We are all set with the equipment and ingredients suppliers and expert consultants to walk us through this process and we don't see any issues arising. We have already run the prototypes at another facility to prove the concept- hence the pictures!
