The Bogota Bread Project is an idea that started with the Colombian bread I grew up eating. When I moved down to North Carolina from New York City there were no Colombian bakeries nearby. I tried looking up recipes for the breads online, but the recipes I did find didn't produce the bread I was used to. So I decided I had to go to Colombia and learn how to make the bread. I contacted a bakery in Bogota and they agreed to take me on as an apprentice. The goal of this project is to write a recipe book of the breads I grew up with and share them with others.
This project is fueled by my love of baking and my desire to connect with others through a universal food: bread. Regardless of culture, background, or origin almost everyone has eaten some type of bread in their lives and has memories associated with it.
The Bogota Bread Project has two parts. The first is to capture the rest of my story behind the bread. Who are the bakers making it every morning? Why are they making it? How did they learn to make it? What does baking mean to them? Over the course of a month, I'll be working in a bakery in Bogota, learning how the bread is made and how much effort and dedication goes into making it.
The second part of the project is to create new food memories by sharing the recipes and techniques I learn from the bakers in the form of a book. If there is something that ties together each generation it is bread. No matter how technology changes our lives with each coming decade, we can still share a table with our families and friends and break bread together.
The (tentative) outline of the book will be as follows:
Chapter 1: Food and Memories. My memories behind the bread and the science of food memories.
Chapter 2: A Brief History of [Colombian] Bread; A life in baking: the story behind the bakers.
Chapter 3: Mis-en-place. Ingredients, equipment, and techniques; what you need to know before you turn on the stove.
Chapter 4: The Recipes and the Stories behind them.
Chapter 5: Afterword. My thoughts on the journey, the art of Colombian baking, and it's future.
From now until the end of April I am working at a bakery in Durham, NC and learning the basics behind breadmaking. I am also researching the background information for the first two chapters of the book.
If the project succeeds I will be in Bogota from May 1st until the 31st. I will be working at the bakery from early morning until evenings 6 days during the week. I will dedicate the remaining hours of the day to writing the last three chapters of the book. On my off day from the bakery I will be dedicating the entire day to researching and writing.

Risks and challenges
I've never written a book before and am not sure how long it will actually take me. Bare with me in the process; it may take a little longer than I claim it will. I can assure you though that when I'm not kneading bread I'll be writing about it.Learn about accountability on Kickstarter
