Musang Seattle is incredibly excited for the opportunity to take our pop-up brand to the next level by opening our own brick-and-mortar establishment. I'd love to share with you more about the mission at the heart of our brand, and ultimately our food.
As a child, the kitchen was the heart of my family's home. My earliest memories were made in the kitchen. I would always end up there, asking my parents if I could help cook as they fed me bits of what they were cooking, or hiding under the table and eavesdropping on conversations between my elders.
The very first time I asked my dad what I could do, he put me to work -- cleaning squid he had just caught. I must have been only five years old.
My father, known to many of us as Musang, is who I learned how to cook Filipinx food at such an early age. He taught me to use always use the freshest ingredients, because if not, people would taste the difference. He also taught me that whatever was on the table, I had to eat it.
His values and no-bullshit attitude shape me and inspire me to continue our traditions and to keep pushing with my passion as a chef.
Over the course of the past decade, training and cooking in Italy, learning the New York grind and hustling with some of the best in Seattle, I now have a home at Bar del Corso in Beacon Hill, which would become the birthplace of Musang as a small neighborhood pop-up - my personal tribute to my father, our family recipes, and my childhood memories. For the last three years have I have proudly served up a series of Filipinx Brunches as well as an annual dinner, Feast of the Seven Fishes. In these, a unique space for our community was also born.
Musang and I have earned local media attention from Visit Seattle, Seattle Met, The Seattle Times, Tech Stars Startup Week Seattle, City Arts, and had the opportunity to cook at the James Beard House as part of a celebration of Regional Filipino Cuisine. Since we've started this thing, we've been able to touch the lives of so many people through our food and creating experiences.
Now we want to bring our love of Filipinx cuisine to even more people. This Fall, we hope to open the doors to a brand new restaurant offering our Musang experiences.
Musang will be a casual, neighborhood establishment, serving personal, intimate, and overwhelming Filipinx dishes from my childhood memories Tuesday through Saturday and Brunches on Saturday and Sunday.
With a 48 seat restaurant space and one big staff, this project is daunting for first-time restauranteurs. Support from friends, family, and community has always been essential to our success. Join us in July as we are reunite with one of our bests, the one and only ELMER DULLA of Junebaby, Salare and Lucinda Grain Bar. We'll be serving up Ate Mel's Sinigang and Elmer will be slanging his favorite drinks for your purchasing and imbibing pleasure. Maybe if you're lucky you'll get a Tequila with a Sinigang Back.
Each ticket includes a bowl of Ate Mel's Sinigang and hella garlic Rice. And a surprise or two might be offered as well.

The Work Ahead of Us
We're starting this project with an empty concrete box. Over the next few months, we'll be adding walls, hanging sheetrock, laying tile, and putting our heart and soul in the space.
Starting from the ground up is daunting, but we're excited to put work into every minute detail, building a new home and space worthy of our guests and community.

Risks and challenges
A first-time restaurant build out is challenging in any environment. We're supremely confident because--together with your help--we're working in careful coordination with our incredible neighborhood.
We've been serving food in Beacon Hill for three years now, and we've been diligently researching and developing our menu through our pop ups, ensuring that our understanding of our food costs as well as labor will help us maintain a sustainable future.
We want to built a supportive environment where young chefs can shape a career and neighbors can share a plate of Lumpia. My dad's first apartment was in Beacon Hill and I was born here, and there's no other place I would want to place my roots.
