We’re Dash and Jonathan Harris, and we’re the founders Hedgehog Bottleshop and Barrelhouse.
We were high-school sweethearts, married 8 years now. We were born and raised in Austin, and after we graduated from the University of Texas, we moved to Portland for a couple of years of adventure. We were inspired by the amazing beer stores there, and we wanted to bring this concept to our home town to share with the city we love. Austin has always been a place for good beer and good times, but it has taken some time for the craft beer scene to arrive. But if you look around, you can see the craft beer market exploding everywhere. With 30+ breweries in our city, Austin is becoming a beer mecca.
That’s where we come in: Hedgehog Bottleshop and Barrelhouse is going to have a highly curated selection of bottles to-go and an awesome rotating taplist. The shop will grow to carry 700+ unique beers selected to serve the needs of craft-beer connoisseurs and novices alike. We will also feature a taproom with extensive patio seating and delicious food options, making Hedgehog the perfect stop-off on the way home from work, or an ideal place to come have a pint with friends. Our beer education classes, tastings, and special releases will satisfy the nerdiest of beer nerds, and our welcoming atmosphere will ensure years of great conversation over great pints.
So what are the funds for? We are SO CLOSE to getting the shop launched, but we need a final push to get things rolling. Build-out costs are a big, crucial part of our process, and we want our community to help us accomplish it. In turn, we want to offer our backers special rewards; early entry into our monthly events, growler fills, your name on the wall, and a pre-opening party JUST FOR Y’ALL. We are so excited to bring our dream to life and share it with all of you.
We are starting the Hedgehog because we are beer advocates who love sharing beer with all. We want to be a part of the emerging craft beer scene and provide a place for anyone to come in feel welcome and enjoy a great brew!

Risks and challenges
There are inherent risks associated with opening a shop. We have to consider client base, staffing, location, marketing, and myriad other concerns.
We have spent the last 2 years researching, getting hands-on experience, and tweaking our business model under the guidance of industry professionals. Our plan is thorough and ready for market-entry.
We have spent over 1 year seeking out the best possible location, finally selecting a spot on 290 W. This high-traffic area is slated to become a retail corridor, attracting customers from Austin, Lakeway, Dripping Springs, and surrounding areas. In addition, in choosing a place in the ETJ (Extraterritorial Jurisdiction), permitting cost and lead times are significantly decreased.
Dash has almost a decade of retail management experience, and has run several successful businesses. Jonathan worked as an Engineer before deciding to devote his talents to opening a craft beer shop. He currently manages the beer program at a local coffee pub, getting hands-on experience in our industry. In addition, he has worked at several local breweries on the bottling line.
We believe we are a strong team on our own, and are fortunate to be bolstered by invaluable assistance from friends and family who happen to be attorneys, brokers, business consultants, accountants, designers, and entrepreneurs. With the help and encouragement of our community, we have been able to overcome the inevitable hurdles thus far, and are confident that we have the skill and support to continue to do so.
