OUR CONCEPT: Plenty of Clouds is inspired by the cuisine and culture of South Central China, bringing together fiery flavors from Sichuan, freshness from neighboring Yunnan, and refreshing, fun drinks in a comfortable and elegant neighborhood restaurant.
Plenty of Clouds will offer high quality, contemporary Chinese food with an ever changing menu featuring light and fresh flavors in addition to addictive MaLa (numbing spice) dishes paired with fresh takes on classic cocktails, locally brewed beer and wine.
THE KICKSTARTER COMPONENT: Through hours and hours of Blood, Sweat, Tears and Savings, we have secured an awesome existing restaurant that is damn near ready to go. We are hoping to raise the funds to help purchase the custom wok range. Shockingly, it is not easy to find a restaurant ready to sling Chinese food like nobody's business!
WHY DO WE NEED IT: Have you ever had a wood-fired pizza? Have you ever made a pizza in your oven at home? There are some pieces of cooking equipment that just can't be messed with. Not to mention that each wok burner has about 4 times as much firepower as your home oven and all 4 burners combined. It gets hot. Real hot. But, It also has incredibly flexible and responsive heat.

Risks and challenges
We feel that we've found an extremely rare opportunity to purchase a restaurant that is in such great shape. We will be working over the next several weeks to paint, decorate and make a few small changes (and one big one- that big, bold wok range)! We anticipate being able to open in approx 1 month. The only outstanding issue is that we are still waiting on Lawyers and Realtors to do the things that they do so well, and have not officially signed the papers. However, we hope to finalize that, as soon as May 1st. In any case, it should happen well before this campaign is over, and we will gladly update with that news when available!
Staffing in Seattle can be tough, especially in the Summer. However, we feel that with the networking we've done while here for the past 3 years will help us with both first-hand references, as well as understanding what works and what doesn't in our local market.
