Meet Andre of Andre's Ribs
My name is Andre J Moore. I am originally from Deatsville, Alabama. I moved to Albuquerque, New Mexico seven years ago after being medically discharged from the Army. I started cooking when I was a teen, and at that time it was just for friends and family. I learned a few tricks from my dad and other relatives. As I got older, I started putting my own special touch on some classic southern BBQ dishes and began to perfect my craft.
I love cooking for people. I am turning a life-long dream into a business by launching a food truck to bring this amazing product to the people of ABQ. With a food truck, I will get enjoyment in seeing the smiles on peoples’ faces when they step up to get the best BBQ they will ever find. It is the greatest feeling to know that someone is truly enjoying something you made.
The meat of Andre's Ribs
My ribs are made in the southern-style tradition along with my own creative southwestern flair. Southern ribs are known for their exceptionally tender meat, and I carried those cooking techniques with me to the southwest. New Mexico's culture influenced my cooking, and since then I have added New Mexican spices and chiles to my BBQ. My ribs are made each and every time with my family's secret sauce recipe and a unique blend of dry rubs.
My smoked ribs are the main attraction of Andre's Ribs, but the food truck will feature a variety of BBQ dishes including brisket, pulled pork, wings, baked beans, fried okra, cold slaw, potato salad and more. I want to bring ABQ, New Mexico the best BBQ experience it has ever seen or tasted.
Taking Andre's Ribs to the street
Right now I have a hand full of people ready to help me bring these products to the people of ABQ. We are a mixed group of people with a wide array of backgrounds spanning from military personnel, to engineer students, to writers. This group has one thing in common: the love and need for great BBQ in ABQ.
Last year my team and I competed in Startup Weekend ABQ and won second place. In the next year I plan to enter and win as many BBQ contests as possible. This will show exactly how special and unique my art of smoking and grilling has truly become. Since Andre's Ribs initially began, I have catered five different events and plan to continue catering. I also have an agreement with Distillery 365 to serve their patrons on nights and weekends.
Running a food truck will be a great way for me to bring this amazing product to the people of ABQ who have limited lunch options. Having a food truck not only gives me the opportunity to reach people for lunch or at events, but it also allows me to participate in outreach programs by bringing hot food to those in need including the homeless and other veterans.

Risks and challenges
With every new venture comes risk. Andre's Ribs need to find the right manufacturer that can design and build the perfect truck for Andre’s Ribs. If we are unable to purchase a new truck that is tailored to our specific needs, then the top risk is finding a used truck that is functional and requires minimal to no repairs.
One challenge that we currently face includes obtaining equipment that can be inspected so that we can become fully licensed and registered with the state of New Mexico and Bernalillo County. The next challenge is going to be finding locations to vend. We have two locations so far; a dinner location with Distillery 365 and a possible lunch location at The Brew. Both locations are in the Albuquerque area. Other risks and challenges are building the brand, finding qualified workers, and securing a local supplier of meats, vegetables, and spices.
We have been working to overcome these challenges by being trained how to work in a commercial kitchen, how to build a menu, and how to secure suppliers. This has all been done with help of the Mixing Bowl - The Kitchen for Entrepreneurs. We have also obtained our LLC and insurance.
